Excuse Me Sir, Do You Have Any Grey Poupon?

 
Mustard, a member of the Brassica family, is found in white, yellow, and brown or Indian varieties. White and yellow varieties originated in the Mediterranean region while the brown or Indian variety originated in the Himalayas. As mustard became one of the first domesticated crops, the powdered seeds were mixed with mustum, which is Latin for unfermented grape juice, as a condiment in the 1300s. Greeks and Romans also used the seeds of the plant as powder or paste. The mustard condiment or powder typically seen in stores is made from the seeds of the white or yellow mustard plant, which is the dominant variety produced in North America, but the leaves and stems of the plants can also be used. The spicy, crunchy leaves of the plant are best steamed and balanced with butter, tomato, garlic, and/or onion and also pair really nicely with ham, pork, or bacon. To store the leaves, keep in the fridge for a few days and use as soon as possible. Click here for a braised mustard green with bacon recipe.

Friends of the Farm: Wolf Peach

Wolf Peach, situated at 1818 N. Hubbard St. in Milwaukee, is a modern European style restaurant bringing fresh ingredients from the outside in, literally. The restaurant grounds feature a 1000+ square foot garden (and an additional acre on the Kohl Farm) run by chief farmer Natalya Gruenwald. It's not uncommon to see the chefs and bartenders out in the garden hunting for the ideal ingredients for the night's menu. Other sources of fresh, local food for the restaurant include us right here at LotfotL, the Clockshadow Creamery, Sassy Cow creamery, and Golden Bear Farm, among others. The name for the restaurant comes from the scientific classification for the tomato, Lycopersicon Esculentum, which translates literally into wolf peach. Visit them for nightly dinners or brunch on the weekends from 10 am to 3 pm. Thanks for being a great friend of the farm, Wolf Peach!

The Dirt on the Farm: 
Falling into Fall

According to the calendar, we have transitioned into a new season; fall is upon us. The fields have shifted into their new wardrobe, shedding the summer crops like cucumbers and zucchini. The corn and tomatoes have been emptied of their fruit and grain and await winter tilling and field prepping. This year, the peppers and eggplant didn't have much of a life, yielding poorly or not at all, but the brussel sprouts popped out early. If all goes well, we will have a new fall offering called flower sprouts - a combination of brussel sprouts and kale! The sweet potatoes are nearly ready to dig and begin their month-long curing process, and the winter squash are all coming in now. Watch for bigger variety of fall greens to appear, like spinach, arugula, mustards, broccoli rabe, and sorrel, in addition to things like radish and colored cauliflower. So, although many things have already come to an end this year, we still have plenty of bounty to be grateful for. Read more...
