Friends of the Farm: C. 1880

Circa 1880 is the brain-child of owner/chef Thomas Hauck whose vision was to incorporate farm fresh produce and food from local, artisanal farms into an atmosphere that is at once intimate and romantic, yet adventurous. Thomas gained his culinary experience in New York, France, and Washington DC and brought it back to Milwaukee in 2011 with the opening of C. 1880. The restaurant and it's chef have won and been nominated for several awards including the Best Food in Milwaukee and WI from Open Table.com, Food & Wine Magazine's People's Choice Best Chef in the Midwest, and have been recognized by Best Chefs America for the past two years. Award-worthy menu items include duck with chestnuts, turnips, and pears; pheasant with spatzle, mustard, and savoy cabbage; and lamb with baba ganoush, pita panzanella, and pickled peppers. The restaurant also features a regular tasting menu and a seasonal tasting menu featuring various squash dishes. Visit C. 1880 today at 1100 S. 1st St in Milwaukee, on their website, or their Facebook page. Thanks for being a friend of the farm, C. 1880!

Hakurei Turnips: The Root Vegetable with Many Names

The Hakurei turnip is a root vegetable with many names including Japanese, Tokyo, or salad turnips. They're the most mild and sweet tasting of all the turnip varieties, so it's not necessary to cook them, making them the ideal turnip for salads. Other possible methods of consuming these turnips include making a quick pickle or cooking them with their greens to enhance the natural sweetness of the root. They can be stored unwashed, in a plastic bag in your fridge's crisper drawer, but be sure to separate the greens and store those wrapped in a damp towel or in a plastic bag in the fridge. Hakurei's can also be frozen for later use using one of two methods. The first is to cut the turnips into cubes, blanch them for 2 minutes, dry, and freeze. The second is to fully cook the turnips, mash them, and freeze. If using them right away is the plan, check out this Pinterest board full of turnip recipes.
