We've been selling the Norwegian steelhead for several weeks, raised in the fjords, now we're offering some wild steelhead fillets, caught in Alaskan waters.
     Steelhead are rainbow trout that find their way from freshwater habitats to the ocean. Like salmon, they go back to freshwater to spawn, but unlike salmon, that die after spawning, steelhead swim back out to sea to spawn again.

HOW TO HANDLE FRESH FISH & SHELLFISH:
FIN FISH
We get our very fresh restaurant-quality fish and shellfish delivered to our door on a daily basis, except for Sunday. It's fresher than you can get from most grocery stores, because grocery chains have distribution systems -- the fish goes to a warehouse, then to the stores. One or two days can make a huge difference in quality and freshness.
Our fish is stored at around 34 degrees F, in the stainless steel pans placed in crushed ice in our cases. Home refrigerators are not nearly this cold.
     This is why we tell our customers to eat their fish within 24 hours, or freeze it. We also tell customers that fish kept over night in the fridge should be rinsed under very cold water and patted dry before cooking. While wrapped up and stored in a home refrigerator, fish will accumulate a small amount of gas (meat and poultry do as well) that simply needs to be washed away. It doesn't mean that the fish is bad. But more than one night in a home refrigerator is not conducive to a great fish dinner. If you don't eat it, freeze it. 
     Some types of fish are stronger tasting, and hence have a stronger odor than others. There is a difference between a slightly fishy smell and an "off" smell. Fish like marlin, walleye, tuna, bluefish etc. will have a more noticeable odor than fish like sole or tilapia.  
     We recently had a customer bring back fish purchased before Christmas, wanting a refund, because it smelled bad. It was 2-week-old fish that had been kept in a home refrigerator. We've had people, in the summer time, leave fish in their car, and bring it back, saying the fish had "gone off." Of course it did, but not because of us.
SHELLFISH 
     Some shellfish, like oysters, clams and mussels, are alive before they're cooked. We tell customers to leave the bag open in the refrigerator, or transfer them to a bowl, so the shellfish can breathe, and we poke holes in the bag. At Christmas, we had one customer bring back all of his oysters, which he said had "died" - most likely because he or someone else had tied up the outer plastic bag, and suffocated them all. If several people had brought back their oysters, we would think we may have had a problem - when one person brings something back, it's usually pretty obvious that they were the culprit. We check all of the oysters, clams and mussels before they leave the store - we know they're alive when they go out the door. 
     We only sell fresh fish and live shellfish that we know to be really fresh. Most other shellfish - crab legs, shrimp, lobster tails etc., is shipped frozen, because it's so perishable. Being in the middle of the country, it has to travel quite a distance, so freezing keeps it safe. Frozen shellfish should be kept frozen until consumed, and thawed before cooking. The best way to thaw it is to leave it in the refrigerator over night, or placed in a sink of cold water, still in it's packaging. Frozen shellfish should be used in a maximum of 6 months, unless you have a commercial-quality freezer that doesn't get opened very often. 
     If you have questions about storing or cooking fish or shellfish, just ask. We truly want you to have a good experience. (But if you screw up, please don't blame us.)
