Many of our summer favorites have stuck around longer than usual because of the nice weather we’ve ben having but that will likely change very quickly.

This weeks featured heirloom apples from Scott Farm in Dummerston, VT.

Hohlstein
A German apple from the early 1900’s, thought to be an offspring of Cox’s Orange Pippin. A crisp apple with a citrus flavor and a sprightly balance of sugars and acids. Sometimes there is a hint of pear. Good for eating and cooking. Tends to be a large apple with orange-reddish skin. Very juicy, this is a good apple to blend in with other apples in a pie or tart.

Hubbardston Nonesuch
The pride of Hubbardston, MA in the late 1700’s. For generations, this apple has been highly regarded as a dessert, or fresh use apple, although it’s also very good in crisps and pies. “Nonesuch” was an Americanized version of the French term “nonpareil,” which was used to describe apples of the finest flavor. A beautiful clear red skinned apple, this is one of the best early season heirlooms that we grow.

New Apples

McIntosh
Sweet and tangy. The flavor is slightly tart, with a crisp and aromatic flesh. Nicknamed the "Mac". Classic Fall apple in New England!

Ruby Mac
The Ruby Mac flesh is more fine-grained than coarse and quite juicy, tinted green, and crisp though not hard. The flavors are balanced, though with some pleasing tartness, and present vinous flavors. There's also a little bit of raspberry, a nice touch, and some spice in the finish.

Ruby is clearly part of the Mac clan, distinguishing itself with some bright clean flavors. Some say Ruby Mac is a McIntosh x Rubinstar cross. But many other sources say that Ruby Mac is really a just sport of McIntosh, just as Rubinstar is a sport of Jonagold.

When you order a produce basket we always try and feature a new local apple variety each week. We also try to include a different Winter Squash for several weeks so you can add variety to your diet and really taste the local Fall flavors. It's a great way to challenge and introduce yourself to new items.

Delicata Squash
Delicata squash is an heirloom variety with a sweet flavor similar to sweet potatoes. It is rich in vitamin A, vitamin C, fiber and potassium. The skin is tender enough to eat when cooked, so there's no peeling involved. All you have to do is slice it and then cook it.

Ricotta salata is a variation of ricotta that has been pressed, salted and dried. Ricotta salata is hard and white and has a mildly salty, nutty and milky flavor. It can be shaved or grated over salads, pastas and vegetable dishes.

Recipes
Roasting intensifies delicata squash's flavor. Seasoned with rosemary and maple, this recipe's great on its own or with pork or turkey.
The spices develop a zippy deep flavor profile. The coconut milk only adds about a gram of fat per serving but it tastes like you are eating full cream!
