The UU Church of Akron's Racial Justice Task Force is hosting an all day workshop on November 19th. You are welcome to join us. Race Forward Akron: Building Community and Taking Action for Racial Justice Saturday, November 19, 9 am - 3:30 pm at UUCA $15 donation or pay what you can. Pre-Registration is requested. This conference will include workshops on Recognizing Racism, Understanding and Transforming White Culture, Racism in the Digital Age and How to Talk About Racism with Family, Friends and Co-Workers. Hey UU: What's cooking? #31
Marinated Vegetables
This dish is easy and can be served right out of the oven, cold, or at room temperature with any kind of protein. You can use summer squash or zucchini, eggplant, peppers of every color, asparagus, or a combination. Onions are good in it, too. You can also use winter/root vegetables such as carrots, parsnips, regular or sweet potatoes, winter squash, red or golden beets with onions and brussels sprouts. The marinating time is 12 hours, so you have to prepare it in advance.

ngredients (for four servings)
1-1/2 lb. veggies
salt and pepper to taste
2 T. olive oil
2 T. balsamic vinegar (optional-for a zippier flavor)
2 large cloves garlic, sliced
Directions
Preheat oven to 425.
1. Chop veggies to roughly the same size so they'll all be done at the same time.
2. Put everything in a large bowl and mix to coat evenly with the oil; marinate for about 12 hours.
3. Spread veggies in one layer on a baking sheet or roasting pan.
4. Roast at 425 for about 30 minutes, turning them over after 15 minutes.
Serve hot, cold, or at room temperature.
