Hey UU: What's Cooking?  #18
Ramen Noodle Salad

vegetarian... a favorite for pot lucks because it is so easy. This recipe can be made with gluten free noodles. If you want this to be vegetarian use the vegetable stock variety not the one with chicken, beef or shrimp soup base.

Ingredients:
1 lb shredded cabbage
½ C slivered Toasted Almonds
1 pkg. Ramen noodles
1/3 C sesame oil
3 Tbsp  rice vinegar
2 Tbsp Sugar
1 Tbsp Soy Sauce

Directions:
1.  Mix cabbage and green onions (other vegetables as desired) in a bowl
2.  Combine flavor packet from noodles with oil, vinegar, sugar, sesame oil and soy sauce in a small jar or bowl with a lid.  Shake to mix well.
3.   Break up noodles and mix with toasted almonds.
4.  Just before serving: Mix all the ingredients into the bowl with the cabbage. Toss well.
