Hey UU: What's Cooking #6
Lentil Soup with Greens and Lemon
This soup is my go-to recipe when I need a delicious soup and have some greens on hand. It is easy, hearty and especially good with a hunk of brown bread and a bottle of beer. 2 tablespoons olive oil 1 onion, chopped 3 cloves garlic, chopped or pressed 1 1/2 cups lentils, rinsed and picked over 7-8 cups veggie stock (or water) 1 potato, diced 1 big bunch chard (or spinach or kale) 1 tablespoon cumin 1 teaspoon ground coriander 1 teaspoon freshly ground black pepper 1/2 teaspoon cayenne (or less, to taste) juice of 1/2 lemon (or more, to taste) Salt to taste 1/2 cup fresh cilantro, chopped
Garnish: Regular or vegan sour cream or plain yogurt Directions: 1. In large, heavy-bottomed soup pot, heat oil and sauté onions until golden. 2. Add garlic and lentils and sauté just until garlic releases its fragrance, about 30 seconds. 3. Add stock or water and potato. Simmer 20 minutes, 4. Then add greens. 5. Meanwhile, toast spices in a dry skillet until they release their fragrance. 6. After lentils are tender -- about 45 minutes to an hour -- then add spices, salt, lemon juice and cilantro and serve topped with sour cream or yogurt (or not).

TRUSTEES
Matt Smith became a member of First Unitarian in 2012. He is a member of the Men's Covenant and Book Discussion Groups and serves as Treasurer and a member of the Board of Trustees. Prior to retiring, he was the Chief Financial Officer for a privately held corporation and presently lives in Sagamore Hills, Ohio.
Heather Torok
has been a member First Unitarian since 2003, along with her husband, Gabriel and their children Julia and Graham. She has served on the Stewardship Committee, co-chaired the Young Families Covenant Group and taught RE for several years since joining the church. Heather has a background in public health and has worked at both large hospital systems and community based non profits. She is currently a Senior Program Officer at the Saint Luke's Foundation. She lives in Shaker Heights with her family.
Bill Morgan
has been a member of the First Unitarian Board of Trustees since 2013 and has been asked by the Nominating Committee to serve another three years. He has been involved with Unitarianism all his life and has been deeply involved in MCAC events at First Unitarian. He and his wife, Barb, have two sons, and five grandchildren.
Shane Millette
has been attending First Unitarian since 1999 along with his wife, Ann Millette and 4 children. He served many years as an RE teacher and also on the Family Connections Planning Committee. He is currently serving on the Church Finance Committee. Shane is a CPA with his own practice serving primarily non-profits. He lives in Shaker Heights with his family.
NOMINATING COMMITTEE
Kathleen Zassick
has been coming to First Unitarian since 1994. She has served on various committees including Kitchen, Ushering, Social Justice, Board of Trustees (2002-2005, 2013-2016), Nominating and has been teaching Sunday School for the last nine years. Kathleen grew up in Parma and attended a Catholic grade school, high school and college. Kathleen currently works in the Regulatory Affairs group for West-Ward Pharmaceuticals and lives in Independence with her children, Rebecca (12) and Brian (10), and her husband, Eric Angyal.
Dennis Grossman
has been coming to First Unitarian for over 24 years. Dennis has been involved in RE, teaching grade 1 through 6. He has worked on stewardship and co-chaired the campaigns for two years. He served on the Board of Trustees from 2012-2015. During that time he also served as the church treasurer and served on the Finance Committee and the Executive Committee.

ANNUAL MEETING!

All those who have been members of First Unitarian Church in good standing for at least six months are urged to participate in the democratic process of our congregation's Annual Meeting. This meeting is where a quorum of members reviews our budget for the coming year and the nominees for the Board and the Nominating Committee. This is an important process. This year, we will be hearing brief required reports, voting on the budget and the nomination of Board and Nominating Committee members. Please plan to participate in this annual ritual of congregational polity.

The New Jim Crow
Valerie Freseman, our Killam Intern, will be facilitating a 3-part discussion of the book
The New Jim Crow: Mass Incarceration in the Age of Colorblindness, by, on three Wednesdays in July: July 13th, 20th, and 27th. This important book by noted Civil Rights Activist Michelle Alexander was chosen as the 2012 UUA Common Read.

Don't miss these exciting musical events at First Church during the month of June!
- On Sunday, June 5th, Mike will be joined by our own John Gibbon on cello for special music during the service. Music of Frederic Chopin will be featured.
- You only have two more chances to enjoy our Chancel Choir before they go on summer hiatus until the ingathering service in September. The choir will sing during the Sunday services on June 5th and June 12th.
- If you missed their evening concert in our sanctuary a few weeks ago, you can still catch The Greater Cleveland Flute Society, as they will be performing during our service on Sunday, June 26th.
- Save the date: we will have a special guest musician on Sunday, July 10th. Shen Lu, who will be one of the participants in this year's Cleveland International Piano Competition, will be playing as our guest musician during the service that morning and then will present a free concert in our sanctuary at 1:00 that same afternoon. Tell your friends and be sure to join us for this special event!

The top 4 issues were: Institutional Racism, Voter Registration and turn out, Gun Control, and Education. Your GCC Core team has been working to identify possible actions to address these issues. Please join us for another conversation with Khalilah Worley, your Core Team, and other First U leaders, to learn how to move to action, and determine what action(s) we may engage in together. ARE Proposal Forms
The Adult Religious Education Committee has been very pleased to hear how many of you have been inspired by our course offerings and wish to contribute your own ideas and leadership. We've gotten wonderful suggestions for movie-discussion nights, for multi-session classes, and more. In response, we have created an " A.R.E. Proposal Form" so that we may best serve you and support you in offering your gifts. You can find this form below, in Fellowship Hall, by request, and in the RE Wing, and it is your vehicle to tell us what sort of course or class you might wish to offer, or see offered. As we plan for the upcoming year, 2016/17 - we'd love your input.
