Hey UU: What's Cooking?  #24
Orange Pan-glazed Tempeh Recipe

Here is a yummy Tempeh recipe for people who don't think they like Tempeh.  Serve with a rice or pasta dish.

HS note: This recipe is equally good made with tofu. I made a couple minor tweaks to the recipe based on American ingredients/measurements. You can make a meal out of this by pairing it with some lightly sauteed seasonal vegetables, or in this case I simple served if over some left-over cooked wheat berries that I heated with a bit of chopped kale.

1 cup freshly squeezed orange juice (3-4 large juicy oranges)
1 tablespoon freshly grated ginger
2 teaspoons tamari (or soy sauce)
1 1/2 tablespoons mirin (see note below)
2 teaspoons maple syrup
1/2 teaspoon ground coriander
2 small garlic cloves, crushed
roughly 10 ounces of tempeh (or extra-firm tofu)
2 tablespoons olive oil
1/2 lime
a handful of cilantro (coriander) leaves

1. Put the orange juice in a small bowl. Squeeze the grated ginger over the bowl to extract the juices, then discard the pulp. Add the tamari, mirin, and maple syrup, ground coriander, and garlic. Mix together and set aside.

2. Cut the tempeh (or tofu) into thin-ish, bite-sized pieces, and if working with tofu, pat dry with a paper towel.

3. Put the olive oil in a large frying pan over medium-high heat. When the oil is hot but not smoking, add the tempeh and fry for 5 minutes, or until golden underneath. Turn and cook the other side for another 5 minutes, or until golden. Pour the orange juice mixture into the pan and simmer for 10 minutes, or until the sauce has reduced to a lovely thick glaze. Turn the tempeh once more during this time and spoon the sauce over the tofu from time to time.

4. Serve the tempeh drizzled with any remaining sauce and a squeeze of lime, with the coriander scattered on top.

Heidi note: As I mention in the head notes, I served this over some leftover wheat berries heated with a few handfuls of chopped kale.
Serves 4. (or two if you love it as much as we did -h)

When a recipe calls for mirin, the Japanese sweet rice wine, you need a combination of acidic and sweet flavors. Add between 1 and 2 tablespoons of sugar to 1/2 cup of white wine, vermouth, or dry sherry to replace 1/2 cup of mirin.

LEADERSHIP LUNCHEON

Join Board of Trustees President Eileen McCully for lunch and a discussion about getting more involved as a leader at First Unitarian.  You know all those people you see being in charge of stuff?  None of those people were born with the word "Leader" stamped on their forehead.  Some of them dove right in because they felt a passion.  Others needed a little more support.  Come and be supported.  We'll talk about how things work here at First Unitarian as well as some opportunities for more formal training in leadership and governance.  You won't be asked to commit to anything.  Lunch is on me.   Sunday, Oct 2 at 12:30 in Fellowship Hall.

GCC GET OUT THE VOTE CAMPAIGN CONTINUES

GCC GOTV canvassing will continue on Saturdays and Sundays in October.  Other events are also planned in early November.  GCC's goal is to increase voter turnout, especially in targeted neighborhoods with low voter turnout.  Substantial training is included.  At least 12 from First U have already participated.  We hope you'll also consider signing up to help make a difference in this critical election.  You can sign up and talk to others who have already participated at the GCC Table at Coffee Hour October 2 and every Sunday in October.

HYMN SINGING WORKSHOP

Have you ever felt lost when trying to sing one of the hymns on a Sunday morning? Would you like to learn more about how to sing and read music? Have you ever thought about singing with the choir but you're not sure you have the voice for it? Or are you just looking for a way to expand your horizons and have some fun?  If the answer is yes to any of these questions, then here's a perfect opportunity for you:  On the first Wednesday of every month, our music director Mike Carney will be leading a workshop in hymn singing and general vocal technique. Learn how to read music (especially some of those trickier hymns), how to breathe and think like a musician, and how to use your voice as the beautiful instrument that it is meant to be. Whether you are an experienced vocalist or a musical greenhorn, here's your chance to make some music, learn a few things, and have a lot of fun! We'll meet from 6:15-7:00 in the Worship Center the first Wednesday of every month, including Wednesday, October 5th . No registration is required, and you can drop in or out from one month to the next if necessary. All ages are welcome! If you have any questions, contact music director Mike Carney by email ( [email protected] ) or phone (216-751-2320, ext 23).
