Lemon Water

Lemons make me smile. They are so bright and cheery, aren't they?

 

Here's something else that should make you smile. They have a lot of health benefits. Lemon helps increase the amount of bile that your liver produces, aiding in digestion. It also helps relieve toothaches and sore throats, fights acne, gives you radiant skin, and much more

 

I squeeze a wedge of lemon into a glass of water each day to gain the benefits. Be careful, though! Lemons are very acidic and can harm your teeth's enamel over time. You can help prevent that by drinking through a straw and rinsing your mouth with water afterward.

 

In this week's digest, I provide tips and tutorials for all the ways you can use lemons.

Lemon Cake


 

Fellow frugalista DeBi provides another allergy-friendly recipe. This versatile cake can be easily dressed up for dinner parties by adding fresh berries, or kept simple with a light sprinkling of confectioner's sugar. The recipe was adapted from the Food Allergy Mama's Baking Book.
 

 

Ingredients: 

  

Cake

1/2 cup dairy-free margarine
1 1/2 cups granulated sugar
2 teaspoons grated lemon zest
3/4 cup silken tofu
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup soy or rice milk
1/4 cup freshly squeezed lemon juice

Glaze

2 cups confectioner's sugar
1 teaspoon grated lemon zest
1 teaspoon vanilla extract
1/2 teaspoon fresh lemon juice
3-4 teaspoons soy or rice milk
 

 

Directions:

  1. Preheat your oven to 350 F and spray a 13- by 9-inch baking dish with dairy-free cooking spray. Set aside.
  2. In a large bowl, combine the margarine and granulated sugar with an electric mixer until light and fluffy.
  3. Add 1 teaspoon lemon zest and the tofu, beating well.
  4. In a medium bowl, combine the flour, baking soda, and salt with a wire whisk.
  5. Add the flour mixture to the margarine mixture, alternating each addition with soy milk, and beat well.
  6. Stir in the lemon juice.
  7. Pour the batter into the prepared baking dish and bake for 25 to 30 minutes, or until a toothpick inserted in center comes out clean.
  8. Cool completely.
  9. To make the glaze, combine all the glaze ingredients in a small bowl, adjusting the soy or rice milk until you reach the desired consistency. Drizzle the glaze over the cooled cake.
