There is snow on the ground as Iām writing this, but I know spring will be showing up soon! One of the ways we celebrate the arrival of spring is by enjoying fresh asparagus on the grill. Choose thin, green stalks with tightly closed heads. Bend one of the stalks near the base and where it breaks is where you should cut the rest of the bundle to get rid of the woody pieces.
Grilled Bacon-Wrapped Asparagus
Ingredients:
10 fresh asparagus spears, trimmed
1/8 tsp. pepper
5 bacon strips, halved lengthwise
Olive or canola oil
Directions:
- Preheat grill to medium heat.
- Lightly drizzle oil on asparagus and turn to coat. Sprinkle with pepper.
- Wrap a long bacon piece around each spear; secure ends with toothpicks.
- Grill, uncovered, for 4-6 minutes on each side or until bacon is crisp. Discard toothpicks.
