9 Tips for a Healthy BBQ

Summer is here at last! What summer would be complete without a delicious meal on the BBQ? Yet, you've probably been hearing about the link between grilled food and cancer. Here are 9 ways to minimize your risk and make your next summer BBQ healthier:

Family BBQ

  1. Keep a watchful eye to prevent BBQ flare-ups and the resulting charring of your food.
  2. Use lower to medium cooking temperatures. When foods like meat are heated over high temperatures or come in contact with flames, certain compounds can form.  These compounds are called:  Heterocyclic Amines (HCA) and Polycyclic Aromatic Hydrocarbons (PAH). Both compounds are known carcinogens. But, you don't need to remember their names to lessen your risk of exposure to them.Marinate meat in olive oil and lemon juice-based marinades.  Research shows that these two items can reduce the formation of the cancer-causing compounds by up to 99% while cooking. Not to mention that they tenderize the meat, add great flavor, and help keep it moist during cooking.
  3. Choose foods that are low in fat like vegetables, lean cuts of meat, poultry or fish. Heterocyclic amines and polycyclic aromatic hydrocarbons are primarily formed when fats are heated to high temperatures or fall into the flames and create smoke. By choosing lean cuts of meat and vegetables which are naturally low in fat, you reduce the chance of these compounds forming at all.
  4. Trim excess fat from meat prior to cooking it (for the same reason as number 3).
  5. Choose specific herbs for your marinades. These herbs include: basil, mint, rosemary, thyme, oregano, and sage.  Scientists at the Food Safety Consortium project at Kansas State University have discovered that these herbs drastically reduce the formation of heterocyclic amines. Simply use one or more of these herbs, preferably fresh, in a marinade prior to and during cooking. Plus, they add tremendous flavor.
  6. Avoid overcooking vegetables. The longer they cook the more certain vitamins like vitamin C and B-complex vitamins break down. So don't overcook them.
  7. Add more vegetables to the grill. One of the easiest ways to make your BBQ healthier is to add more veghies. Making kebabs is a great way to do this. By alternating lean meat and vegetables, the veggies will keep the meat moist and add fiber, flavor, and nutrients.
  8. Clean your grill prior to every use. Not only is it more appetizing to eat food that's been cooked on a clean grill, but you'll be lessening the amount of char that you'll be eating. The charred parts of food can cause free radical formation in your body and since free radicals are linked with premature aging, disease, and tissue damage, it's best to reduce your exposure as much as possible.

If you're trying to eat healthy, you really can have your grilled food and enjoy it too.

Fruit Juices: Don't let the "Pure" label fool you

Can you believe anything corporations tell you these days...especially if it has toOrange Juice do with healthy, natural food?  Recent media attention is shining a harsh light on the use of "pure" to describe beverages such as mass-produced, big-brand orange juices like Minute Maid, Tropicana, Simply Orange, and Florida's Natural.  It is probably not news to you that the processing part of these manufactured drinks removes most of the essential, healthy elements of the juice; however, did you know that the companies add artificial flavouring back into juice that has been de-oxygenated and stored for up to a year?

Year-old juice with artificial flavour is not my idea of pure. If you really want an orange juice, consider making it yourself - it isn't that hard, takes about a minute, and ultimately it is cheaper than buying cartons of low-quality orange drink.  You can use an inexpensive manual juicer or splurge for an automated version.  If you have a high-powered blender that will pulverize the seeds, you can peel and blend whole oranges for a whole juice experience.  Alternatively, you can get your orange fix, complete with fiber, by tearing into a whole juicy orange and benefit from the truly pure health properties it provides.

Study Found Celery and Parsley Effective against Breast Cancer

A new study at the University of Missouri and published in the journal Cancer Prevention Research, found that a phytonutrient (plant nutrient) found in celery, parsley, apples, and oranges was effective against cancer in two ways:

1)      It blocked tumor formation by cutting of the formation of new blood vessels needed by tumors; and

2)      It decreased the number of tumors.

Apigenin is a type of phytonutrient in the flavonoid group of naturally-occurring chemicals. The researchers tested apigenin on rats that were exposed to medroxyprogesterone acetate (MPA)-a chemical used in the laboratory to induceParsley breast cancer. Scientists found that apigenin in celery, parsley, and other fruits and vegetables was able to block the formation of new blood vessels that feed cancer tumors. The researchers did not indicate a particular amount of these foods to obtain the anti-cancer effects but they did conclude that eating some foods like parsley, celery, and fruit everyday would help to ward off breast cancer.

Better yet, throw a stalk of celery, a handful of parsley, and a cored apple into a blender with a little water for a potent anti-cancer whole foods cocktail.

Recipe: Mexican Bruschetta

This Mexican twist on an Italian favorite is fast, easy, and delicious. It's perfect for a hot summer evening or as a start to a bowl of chilli.

1 tomato (chopped into cubes)

1 avocado (pit and skin removed and chopped into cubes)

1 small clove minced garlic

dash Celtic sea salt or Himalayan crystal salt

handful fresh cilantro

1 Tbsp. Cold-pressed flax oil

1/2 lime

4 slices 100% whole grain (such as rye, spelt, or kamut) or gluten-free bread toasted

While the bread is toasting, mix all the other ingredients into a bowl (except the lime). Squeeze the lime juice over the other ingredients. Toss together. Spoon the tomato/avocado mixture over the bread and serve immediately.
