A Fun Fact about Rudolph the Red Nosed Reindeer!

A copywriter named Robert L. May first invented the oddball reindeer in 1939 as a marketing gimmick for Montgomery Ward's holiday coloring books. (May considered naming the beloved misfit Reginald). And, his nose wasn't originally going to be red.  A red nose was viewed as a  sign of chronic alcoholism , and Montgomery Ward didn't want him to seem like a drunkard! Good thing they changed it. "Reginald, the blue-nosed reindeer" doesn't have quite the same ring ... or charm!

Food for Thought from Katie
It's the Holidays! It seems like we are always eating this time of year and it can be a strain on your waistline and your wallet. Make the most out of your Holiday feast by using the leftovers for healthy meals and snacks!
  1. Use leftover turkey to make a light chili, a protein-packed      salad or a low-carb wrap.
  2. Turn leftover sweet potatoes into a spicy curry soup.
  3. Convert extra cranberries or cranberry sauce into a compote for whole wheat French toast.
  4. Bake leftover bread into croutons to top a kale salad.
Simple ways to keep calories in check:
  1. Choose lean meats aka turkey or chicken over ham or beef.
  2. Use extra mushrooms in the stuffing instead of sausage.
  3. Cook with fresh, raw ingredients as much as possible instead of processed convenience foods.
  4. Portion control!

Cream of Turkey and Wild Rice Soup

  • 1 Tbsp. extra-virgin olive oil
  • 2 C. sliced mushrooms
  • ¾ C. chopped celery
  • ¾ C. chopped carrots
  • ¼ C. chopped shallots
  • ¼ C. all-purpose flour
  • ¼ tsp. each salt and pepper
  • 4 C. reduced-sodium chicken broth
  • 1 C. quick-cooking or instant wild rice
  • 3 C. shredded cooked turkey or chicken
  • ½ C. reduced-fat sour cream
  • 2 Tbsp. chopped fresh parsley
  1. Heat oil in a large saucepan over medium heat. Add mushrooms, celery, carrots and shallots and cook, stirring, until softened, or 5 minutes. Add flour, salt and pepper and cook, stirring, cook for 2 minutes more.
  2. Add broth and bring to a boil, scraping up any browned bits. Add rice and reduce heat to a simmer. Cover and cook until the rice is tender, 5 to 7 minutes. Stir in turkey (or chicken), sour cream and parsley and cook until heated through, about 2 minutes more.
