Ada's Honor Goat Cheese & La Hargue Moelleux

Ada's Honor gets it's name from the first goat herd Queen at
Ruggle's Hill Creamery
in Hardwick, MA. The cheese is inspired by the classic Chabichou style of France's Loire Valley, and features an earthy rind that compliments the smooth texture and citrusy flavors of the body. Texturally, Ada's Honor is exquisitely creamy due to hand-ladling of the curd into it's molds. The American Cheese Society Competition awarded it third place for surface-ripened goat cheeses this year. A fruity wine with a juicy lemon-lime character is a great compliment and La Hargue is just that. This blend of Sauvignon Blanc and Semillon hails from the Bordeaux, and its "Moelleux" style is known for being just a touch sweet. Quite popular in the 1950's, the style is making a big comeback today. It is balanced quite nicely by a zesty, mouthwatering finish!
