RECIPE OF THE WEEK
Tired of eggplant recipes? We're not! Try out this delicious Eggplant Caviar recipe courtesy of Chef Ryan Hughes of Café Degas.

Eggplant Caviar
The recipe calls for two large eggplants, but several of the smaller varieties are a fine substitute.
Ingredients
  • 2 large eggplants
  • kosher salt
  • 1 cup olive oil
  • 1 large onion, minced
  • 5 cloves garlic, minced
  • 1 small red onion, finely diced
  • 1 red bell pepper, finely diced
  • 1 bunch cilantro, chopped
  • juice of 1 lemon
  • black pepper
Directions
Cut eggplants into one-inch slices. Sprinkle salt on both sides of eggplant slices. Arrange slices on a rack and place a heavy plate on top. Put the rack in a large pan and place in the refrigerator to drain for about 2 hours before proceeding with the recipe. (Removing excess water from the eggplant is a key step in making this dish a success.)

Preheat oven to 400 degrees. Brush both sides of eggplant slices with a little of the olive oil. Place slices in a baking dish and bake at 400 degrees for about 30 minutes. Set aside to cool.

Coat a sauté pan with olive oil. Add minced onion and sauté over medium heat, stirring frequently, for about 10 minutes or until onion is translucent and very soft. Add garlic and sauté for 1 minute. Remove from heat and set aside.

Chop cooled eggplant in a blender or food processor with the remaining olive oil until mixture becomes a somewhat smooth paste. Place eggplant purée in a bowl and fold in sautéed onion and garlic. Stir in red onion, bell pepper, and cilantro. Season with lemon juice, salt, and black pepper. Cover and refrigerate.

Serve with French bread or pita chips, or use as a condiment on chicken or fish.
Makes 4-5 cups
Recipe compliments of Chef Ryan Hughes, Café Degas

August 18 Luncheon
Ginger Guttner, public relations director for the LSU School of Veterinary Medicine, will discuss A Tiger's Social Media Plan: The Creation, Evolution and Maintenance of Mike VI's Social Media Presence. In 2010, LSU created a Facebook page for Mike VI, LSU's live tiger mascot. It was set up as a reactive measure, and there was no plan created as to how it should be managed, so it took several months for the page to find its true voice. Learn why Mike's Facebook page was created, how it evolved, the epiphany moment when everything changed, and how the award-winning page is managed now. From very inauspicious beginnings in 2010, Mike now has more than 45,700 likes on Facebook, more than 12,700 followers on Twitter and more than 12,500 followers on Instagram.

Prior to the luncheon, PRAL NOLA members will have the opportunity to take headshots for $25, courtesy of Jeff Strout Photography. Only nine spaces area available and a designated time slot will be provided to those members who participate. Please arrive 10 minutes before your appointment. If interested, select the luncheon and headshot ticket when securing your reservation.

MAYOR LANDRIEU TO MARK 10TH ANNIVERSARY OF HURRICANE KATRINA IN ADDRESS TO THE NATIONAL PRESS CLUB
Will Highlight City's Resilience Over Last Decade of Recovery from Costliest Disaster in US History
NEW ORLEANS  - A decade after Hurricane Katrina devastated the Gulf Coast and nearly wiped out New Orleans, Mayor Mitch Landrieu will report on New Orleans' recovery efforts and progress ensuring the city's long-term resilience at a National Press Club luncheon on Aug. 18, 2015, in Washington, D.C.
Hurricane Katrina, which made landfall on Aug. 29, 2005, is the costliest disaster in U.S. history. When the levees failed, 80 percent of the city flooded and hundreds of thousands of people lost their homes. Also, more than 1,800 people died. On top of Katrina, New Orleans has weathered Hurricanes Rita, Ike, Gustav and Isaac, the BP oil spill, and the national recession - all in the last decade.
In the aftermath of Katrina, Mayor Landrieu and the City of New Orleans understood that to ensure the recovery, growth and long-term survival of the city, it had to work toward building its resilience capacity, not only through infrastructure, but also through major reforms to the city's social fabric. Remarkably, today, New Orleans is one of the fastest growing major cities in the nation. The economy is growing and diversifying, home values have increased 50 percent, schools are rapidly improving, and the city is better protected from flooding than before the storm.
Despite the major challenges that still exist from violent crime, poverty and income disparities, and coastal erosion, New Orleans is poised to be a global model for urban resilience - and at the luncheon, Landrieu, who is serving his second term as mayor, will explain why.
Lunch will be served at 12:30 p.m., with remarks beginning at 1 p.m., followed by a question-and-answer session ending at 2 p.m. Tickets cost $23 for Press Club members (NPC Members may purchase 2 tickets at this rate) and $37 for all other non-member tickets. For questions, please email [email protected] or call 202-662-7501. Tickets must be paid for at the time of purchase.
NPC Members who wish to attend the pre-luncheon reception must RSVP separately to [email protected] 48 hours before the event. Space may be limited. You must have a paid reservation to the luncheon to attend the VIP reception.
To submit a question in advance, put LANDRIEU in the subject line and email to [email protected] before 10 a.m. on the day of the luncheon.

Great Books Discussion Group - "Of Mice and Men"
A/V Conference Room, East Bank Regional Library, Metairie
This is a story of the complex bond between two migrant laborers in Central California. They are George Milton and Lennie Small, itinerant ranch hands who dream of one day owning a small farm. George acts as a father figure to Lennie, who is a very large, simple-minded man, calming him and helping to rein in his immense physical strength.
Library's Great Books Discussion Group

Announces Its Fall Lineup of Books

METAIRIE - The members of the Great Books Discussion Group have announced their reading schedule through December of 2015.

The group meets at 7 p.m. on the third Thursday of each month in the Upstairs Conference Room at the East Bank Regional Library, 4747 W. Napoleon, Metairie.

The group's events are open to the public and are free of charge. Registration is not required.

The group is moderated by Gwen Kelley, a librarian who serves as branch manager for the Rosedale Library.

The books and the dates they will be discussed are following.

7 p.m., Tuesday, Aug. 18, 2015
Of Mice and Men by John Steinbeck

The story, set in Central California, focuses on the complex bond between two migrant laborers, George Milton and Lennie Small, who dream of one day owning a small farm. George acts as a father figure to Lennie, who is a very large, simple-minded man, calming him and helping to rein in his immense physical strength.

Emma by Jane Austen

Beautiful, clever, rich - and single - Emma Woodhouse is perfectly content with her life and sees no need for either love or marriage. Nothing, however, delights her more than interfering in the romantic lives of others. But when she ignores the warnings of her good friend Mr. Knightley and attempts to arrange a suitable match for her protegee Harriet Smith, her carefully laid plans soon unravel and have consequences that she never expected. With its imperfect but charming heroine and its witty and subtle exploration of relationships, Emma is often seen as Jane Austen's most flawless work.

7 p.m., Tuesday, Oct. 20, 2015
A Confederacy of Dunces by John Kennedy Toole

A Confederacy of Dunces is an American comic masterpiece. John Kennedy Toole's hero is one Ignatius J. Reilly, "huge, obese, fractious, fastidious, a latter-day Gargantua, a Don Quixote of the French Quarter. His story bursts with wholly original characters, denizens of New Orleans' lower depths, incredibly true-to-life dialogue, and the zaniest series of high and low comic adventures."

7 p.m., Tuesday, Nov. 17, 2015
The Time Machine by H.G. Wells

H.G. Wells' classic begins at an English dinner party where a group of gentlemen are discussing the device that one of them is making so he can explore the fourth dimension. No one is identified by name but when the men gather the following week, the device's inventor, referred to as Time Traveler, is strangely absent. When he arrives later, he recounts his amazing sojourn into the future. Most of this 1895 novella deals with Time Traveler's stay in a world where dark forces lurk behind an idyllic exterior. After narrowly escaping from a forest fire and hostile creatures, Time Traveler uses his invention to investigate other time periods before returning to share his story with his friends. Despite the fact that he has returned with never-before-seen flowers, most of his companions do not believe him. When one of the dinner guests stops by Time Traveler's home a few days later, he is the last one to see the inventor before he and his Time Machine disappear.

The Little Prince by Antoine Saint Exupery

Antoine de Saint-Exupéry first published The Little Prince in 1943, only a year before his Lockheed P-38 vanished over the Mediterranean during a reconnaissance mission. The narrator is a downed pilot in the Sahara Desert, frantically trying to repair his wrecked plane. His efforts are interrupted one day by the apparition of a little prince who asks him to draw a sheep. "In the face of an overpowering mystery, you don't dare disobey," the narrator recalls. "Absurd as it seemed, a thousand miles from all inhabited regions and in danger of death, I took a scrap of paper and a pen out of my pocket." And so begins their dialogue, which stretches the narrator's imagination in all sorts of surprising, childlike directions. The Little Prince describes his journey from planet to planet, each tiny world populated by a single adult.

Tasting Notes

With tempting aromas of dark cherry, blackberry and spice, Zin-phomaniac is a complex, full-bodied wine with juicy, approachable flavors of ripe blue-purple fruit and dark semi-sweet chocolate. A kiss of vanilla and a touch of brown baking spice add depth to the long, satisfying mouthfeel.

Toasting with Margarita

ROUND TABLE LUNCHEON TO FOCUS ON KATRINA 10TH ANNIVERSARY

With the upcoming tenth anniversary of Hurricane Katrina and its devastating effects on New Orleans and the Gulf Coast, the monthly Round Table Luncheon hosted by Margarita Bergen will focus on the storm and the recovery efforts that have been made over the past decade.
The luncheon will be held at Antoine's Restaurant, 713 St. Louis Street in the heart of the historic French Quarter, on Wednesday, August 19 at 12 noon. Doors open at 11:30 a.m. The luncheon will feature guest speakers on a variety of Katrina-related topics.
The featured speaker will be Sandy Rosenthal, founder of Levees.org and one of the most outspoken critics of the levee failures that led to the flooding of 80 percent of New Orleans and surrounding areas. Over the past ten years, she has been a vigorous leader in the fight for accountability from the agencies responsible for constructing and maintaining the floodwalls and levees, and she has also led the drive for establishing memorial parks at the major levee break sites.
Also featured will be author Jennifer Gremillion, a New Orleans native who documents her powerful true story of adversity, faith and survival in her new book, "Life Storms: Hurricane Katrina." As the first book in Gremillion's "Life Storms" series, the story is written from Jennifer's unique perspective as a screenwriter - interspersed with scripts, thought-provoking questions and powerful reflections.
Author Mary Helen Lagasse will also be featured, discussing her second novel, "Navel of the Moon." This earthy and moving coming-of-age tale is set in 1960s New Orleans but resides, as all good literature does, deep within the passionate mysteries of the human heart. With this new work, Mary Helen triumphantly surpasses the amazing promise of her debut novel, "The Fifth Sun."
Gordon Wadge, President/CEO of the YMCA of Greater New Orleans will also address the group on what the Y is currently doing to improve the quality of life in post-Katrina New Orleans.
The entertainment will be by talented entertainers Becky Allen, Marshall Harris and pianist Jim Walpole.
Antoine's menu will include a Summer Salad, Trout Almondine with Brabant Potatoes and Baked Alaska. The price is $50 all inclusive, including champagne/wines.
Reservations should be made to  at [email protected] or 504-495-9181.

Salon by Sucré is excited to announce details about Cicchetti - a special Italian-style happy hour that the recently-opened French Quarter restaurant is now offering on Thursdays from 4pm-7pm.

In Italy, Cicchetti  refers to small, complimentary snacks or side dishes displayed on the bar in the early evening while guests sip on cocktails. Drawing on this inspiration, Salon is offering a variety of bruschetta and other small snacks free of charge along with $5 drink specials on classic New Orleans cocktails like Sazeracs, Death in the Afternoon, and Tennessee Williams. Cicchetti  is available at Salon every Thursday from 4pm - 7pm.

Salon is the culmination of Sucré's beautiful approach to haute cuisine and its passion for exceptional service and presentation. It blends the formality of New Orleans service with the globally-inspired cuisine of Tariq Hanna in a casual dining room. Hanna's menu draws from a variety of influences, including his Middle Eastern heritage, childhood in West Africa and time spent in Great Britain. Beth McCaskey, an 18 year veteran of NYC's Union Square Café, heads up the bar program, offering several classics, new creations, and an entire tea cocktail program based on Salon's impressive afternoon tea service.

Salon by Sucré is located at 622 Conti Street in New Orleans. For reservations call 504-267-7098 and for more information visit www.shopsucre.com/store-locations

While more than 15,500 animals were rescued during the aftermath of Hurricane Katrina in 2005, it's estimated that 88,700 pets remained unaccounted for, according to the Louisiana Louisiana Society for the Prevention of Cruelty to Animals. No one knows exactly how many animals died but most estimates put the number between 50,000 to 70,000 across the entire Gulf Coast.
In August, the Louisiana Society for the Prevention of Cruelty to Animals will honor these animals with a community art display that gives back.  In observance of the 10th anniversary of Katrina, the Louisiana SPCA is asking New Orleans residents  to donate $10 toward in-need pets in the community. With every $10 donation, donors will be ableto hang a collar on the community art display. Each collar that is purchased will remain on display until after the grand opening of the Louisiana SPCA's expansion, the Adoption, Resource Center and Clinic, Aug. 21-23. After the grand opening, all of the donated collars honoring the animals affected by Katrina will be donated to pets-in-need around the Greater New Orleans area. The funds raised from the purchase of the collars will be used to microchip the thousands of animals that come to the Louisiana SPCA every year.

2015 is the Spay/Neuter Year!
There is still time to take advantage of the amazing deal we're offering to New Orleans pet owners. All year long, Orleans Parish residents can bring their pets to the Louisiana SPCA Community Clinic and receive their spay/neuter surgery for only $20.15! We're also offering $10 microchips with any spay/neuter surgery or wellness visit. Not an Orleans Parish resident? We have a variety of voucher programs that can reduce your spay/neuter costs! 2015 is the perfect year to make sure your pet is enjoying the benefits of being spayed or neutered.

Admission is free.
The National WWII Museum is once again proud to host Culture Collision 7, the annual, one-night-only happy hour that brings together more than 65 of New Orleans's cultural organizations, at US Freedom Pavilion: The Boeing Center. Culture Collision is designed to encourage participation in the New Orleans arts scene. Event attendees can scope out upcoming performances, take advantage of exclusive ticket promotions and meet like-minded art lovers. For the third straight year, Culture Collision will host pop-up performances from four mystery organizations-you'll have to come to the event to find out! The event also features cash bars, complimentary hors d'oeuvres, and a huge free drawing.
Founded in 2008, Culture Collision was created to provide New Orleans's arts and culture organizations with a collective voice, as well as a platform for collaboration and promotion. Culture Collision 7 is hosted by WWNO and sponsored by New Orleans & Me, The National WWII Museum, and Canary Collective. It is organized by the Arts Council of New Orleans, DEVENEY, Louisiana Philharmonic Orchestra, New Orleans Ballet Association, New Orleans Opera Association, the Ogden Museum of Southern Art, Southern Rep, and WWNO.
Admission is free, and pay parking is available after 3:00 pm in The National WWII Museum Magazine Street lot, located between Andrew Higgins Drive and Poeyfarre Street.
