As we cross the threshold into early autumn, nature begins its gradual turning inward. The Chinese seasonal node of Liqiu 立秋, the Beginning of Autumn, marks this shift with a perceptible cooling of the air and a refinement of light. Shortly after, Chushu 處暑, the End of Heat, arrives, signaling the waning of summer’s intensity and the beginning of a more measured, contemplative rhythm.
From a Classical Chinese Medicine perspective, this is a time governed by the Metal phase, a season of discernment, refinement, and release. It is a moment to harvest insight, to cultivate stillness, and to align with the quiet strength that this turning season offers.
This period is further described in the traditional Chinese calendar through poetic phrases that reflect both the environment and our internal landscape. Hanchan ming 寒蟬鳴, Autumn Crickets Sing, reminding us to listen for the subtle. Tiandi shi su 天地始肅, Heaven and Earth Become Austere, an image of nature drawing inward and preparing for what lies ahead. He nai deng 禾乃登, Grains Are Harvested and Presented, a gesture of reverence for what has been gathered, both materially and spiritually.

Ingredients:
- 1 large chicken carcass + any additional bones (raw or roasted)**
- 2 chicken feet***
- 7-8 quarts of filtered water
- 2 large carrots, cleaned
- 2 celery stalks, cleaned
- 1/2 medium yellow onion, skins off
- 2 cloves of garlic
- 1/8 cup apple cider vinegar
- 1 bunch of fresh herbs (parsley, thyme, rosemary)
- 1 bay leaves
- salt to taste
*Always use organic, local foods when possible, for the best health outcomes!

Instructions:
- Place all of your ingredients into a 16 quart sized pot and cover with filtered water.
- Let sit for 30-60 minutes so that your apple cider can begin to break down the bones.
- Bring your pot to a boil over medium-high heat.
- Once brought to a boil, reduce to low/simmer.
- Allow your broth to gently simmer for 12-48 hours. The longer the simmer, the thicker, richer, and more beneficial your broth will be!
- Continue to skim the foam off of your broth during this long simmer.
- Strain your broth and let cool before storing in the fridge.
