I remember when I first met Grizzly Adams, I mean Marc Guillemot. The house was a mess, the grounds were an overgrown disaster and yet...the winery was immaculate! The outside of the building was made of stone with the mud between most of the stones missing. The roof was shattered clay tiles. The inside was an entirely different world. It was as if the two parts of the building were in two different eras.

Concrete and stainless steel tanks were all polished with a mirror gloss. Lab equipment that would make any mad scientist proud, and the smell of cleanliness.

Vire-Clesse is a Chardonnay producing region in southern Burgundy that has created excellent wine for decades, but was never included in the more widely known Pouilly regions. Due to the consistent and exceptional wines coming from the region, the French government created the Vire-Clesse region in 1999. The wines were amazing before, but now they have their own official region!

The wine is 100% Chardonnay. As well, it goes through 100% malolatic fermentation. This second bacteria fermentation gives the wine a creamy feeling on the palate. The vine has an average age of 45 years. On the nose is pineapple and passion fruit, along with a hint of fresh mineral. On the palate, it displays honey and fruit with a lengthy finish.

Drink now or over the next 10 to 15 years, this wines can take on some age.
