The Truth about Lectins Plants vs Meat & smoking
Steven Gundry MD is age 74 years. He claims that cigarette smoking does not cause plaques while the carbon monoxide suffocates the blood of oxygen that lets in more plaques.
It has been found that in Chicago Dr Stamler study of smokers found those eating meat who have higher cholesterol levels will developed lung or bladder cancer, while those with lower cholesterol because of eating more plant based diet, did not develop cancer even if they smoke!
Much like certain Asian nations that smoke yet eat rice or sweet potatoes and have less cancer because of the healthy diet. At least Gundry suggests its fine to eat sweet potatoes and leafy greens, the problem is he like Joseph Mercola DO are confused about triglycerides Fat in the blood. They say mistakenly that complex carbohydrates and fruit "turn to sugar, then triglycerides."
This myth that all carbohydrates turn to fat was started years ago by Dr Fredrickson of NIH referenced studies mixing sugar simple carbohydrates with complex carbohydrates increased triglycerides. However when we consume only complex carbohydrates rich in fiber while avoiding sugar the triglycerides come down over a 24 hour period. This is why doing a blood test after eating provides more information than testing while fasting in the morning.
Further more sugar rushes into the blood stream at 2 calories per minute while fruit has polyphenols to stabilize insulin and blood sugar levels. We know that complex carbohydrates (sweet potatoes and also white potatoes, rice, even white rice, brown basmati rice and legumes) allow the slow breakdown into sugar at the proper level of 18 calories per minute.
Steven Gundry scares you that fruit and vegetables have lectins and protective agent naturally found in fruits and legumes may combat cancer. Remember soak legumes overnight and within 2 hours most lectins are gone. I like to cook beans in a crockpot for two days or with the addition of pressure cooker methods remove the lectins. Wheat germ and spermidine have an anti-cancer anti-aging effect.
Oxalates is another scare Steven Gundry and Asprey use to make you think you should avoid fruits and vegetables. Bananas, blackberries, blueberries, cherries, apples, apricots, lemons and peaches are all very low in oxalates. The only green leafy vegetable you should steam or boil is spinach or rhubarb while are the rest even 20 to 100 cups will be less than 200 mg of oxalates. Those eating animal protein have much higher risk of kidney stones than those consuming fruits and vegetables.
Nathan Pritikin and I referenced when you consume more vegetables, fruit, tubers and legumes with oxalates initially there is a slight drop in mineral absorption, then your body adjust over the course of a year and the body levels of minerals are perfectly fine.
Studies by NIH Rashmi Sinha, A Cross, Meat Intake and Mortality on over half million people divided equally men and woman, age 50 to 71 years during a 10 year period; smokers v non smokers, red meat, processed meat, white meat chicken, vegetarians, vegans shows the vegans, all plant based eaters, with over 60 to 100 grams of fiber a day had the least heart disease, obesity and cancer compared to animal protein eaters. On an animal centered diet its nearly impossible to get enough fiber for gut heal.
