Dear Friend,
We’re in the midst of a beautiful fall season. We love to see the leaves turning colors, and the warmth of the sun and cool breeze that we get throughout most of the San Francisco bay area. We also have the good fortune of what fall brings in terms of presentation and décor. Pumpkins and other vegetables of the harvest, hay bales, wood crates and rustic finishing touches.
Our “go to” floral designer is hard at work creating floral centerpieces and all types of arrangements that incorporate all that fall has to offer, as the photo here depicts.
Whether you are planning a small backyard wedding, or other outdoor ranch-style event, our team of event planners come together to design an appropriate look and feel with the goal of accomplishing your vision at this time of the year.
I am so pleased to mention that we have been much busier in recent weeks receiving requests for predominately full-service events, which includes our chef-prepared menus, but also our staff onsite, floral, rentals, audio-visual equipment, and other services. We genuinely appreciate the trust our clients have in us, to produce their full-service events in a safe and responsible manner.

FALL SEASON
FOODS
As you may know, Cheat A Little Catering is not a restaurant, and our sole focus is on catering. All of the ingredients are fresh and food products are acquired specifically for your event or delivery requests. Thus, our menus are designed with seasonal foods available during the time your event will take place.
Some of the fall foods include, apples, beets, broccoli rabe, Brussels sprouts, cabbage, carrots, cauliflower, chicory, fennel, figs, leeks, pears, parsnips, persimmons, pomegranates, radishes, sweet potatoes, and squash.
When planning your menu, consider our delicious Fig and Gorgonzola Crostini, Roasted Pear Tartlets, and Petite Lamb Chops with Pomegranate Molasses as your starter appetizers, Potato Leek Soup as a first course of your plated meal, and our scrumptious Apple Cider Pork Chops as your main entrée.

REIMAGINING WEDDINGS ... and other events
Part 2
Continuing our look into the changes being made in how the many aspects that guests have come to expect at a wedding or large event are evolving. Changes in seating arrangements for ceremony and reception, and the dancing and entertainment of the “party.” Food service is also progressing to ensure guests are safe and comfortable.
Dinner service may take a little more time, to make certain that spacing and safety precautions are upheld. For plated, sit-down dining, silverware is wrapped and placed for each guest; individual salt and pepper shakers; salads and bread are served table-side upon guest seating, no longer pre-set; and main entrée can be delivered covered, as an extra layer of protection from kitchen to dining area.
Buffet-style service is accomplished with distanced food presentation tables, similar to stations, utilizing clear acrylic shields, and our staff plating and then passing each plate to guest directly. Food stations, always a hit, are still a great option, with pre-packaged items or small plates, think “tapas,” served individually for an easy “grab-n-go.”
Chef Carts … an interactive, at-your-table experience, as guests watch one of our expert chefs prepare fork-friendly small plates of tasty foods. Chefs roam from space to space, table to table, to offer a very special high-level of service.
Chef Bars … a non-mobile version of the Chef Cart… like a Beverage Bar, this is a mini food station with guests served one at a time, or a complete table of guests, with a small plate or main entrée prepared or assembled on-the-spot!
Going forward, our clientele and guests attending events will come to expect and experience the many safety measures and protocols for sanitization, including our staff wearing gloves, masks, and frequent hand-washing.

EVENT
HIGHLIGHTS
For a recent corporate celebration outdoors in a local park setting in Menlo Park, we provided individual Cheese & Charcuterie plates, as well as a delicious dessert.
The company’s leadership raved about the variety of cheeses and meats, fresh and dried fruits, and our house-made herb focaccia bread.
We also handled the beverages with a nice wine pairing.

One of the many passed hors d’oeuvres at a recent wedding reception included our Shrimp Ceviche – Asian-style.
Full of fresh, cold ingredients and served in a fun Chinese spoon, this tasty appetizer was a hit!
Other appetizers included Chicken Satay, Beef Wellington Bites, Baby Crab Cakes with San Francisco Remoulade, Mojito Shrimp Skewers, and our very popular Chicken & Waffle Stacks with Apricot-Jalapeno Glaze.

The amazing couple for this rustic outdoor wedding reside on the coast, and we could not be happier to have catered this special day in their lovely backyard setting.
The wood Farm tables, Cross-back chairs and simple fresh greenery runner all came together for a classy rustic, yet elegant table-scape.
Our menu was comprised of passed hors d'oeuvres, a fresh Spring-Mix salad with Champagne Vinaigrette, Dijon-Mustard Chicken, Lemon-Dill Salmon, and chef's Garlic Mashed Potatoes and Grilled Vegetable Platter.

KEEPSAKE
BOX
Last month we re-introduced our popular service, the Keepsake Box. This is a unique way to serve a catered menu in a gift box that is limited only by your imagination. The “box” can be anything from a picnic basket, tool box, small luggage, beverage chiller, wicker box, wine box, flower pot … you name it.
This is a great way to personalize your special social gathering… baby showers, birthdays, or anniversaries. Also, a perfect opportunity for marketing with your business partners or employee appreciation. Our keepsake boxes balance safety, taste and style to make your event that much more memorable.

FOOD FEATURE:
BACON
Everything is better with bacon! There are countless ways to serve bacon and with multiple options to eat by itself as a side for breakfast or paired with a limitless number of other foods. Think, traditional BLT sandwich or bacon-wrapped date appetizer.
There are also various textures for cooking bacon to desired doneness, and according to personal preferences we’ve had requested, the top three textures are chewy, crisp-chewy and crisp. Cast iron or non-stick skillets are best for stovetop, and good-quality sheet pans are great for use in the oven, although the cooking process can take a little longer.
Top Types of Bacon
We’ve researched “bacon” and found so many from around the globe, including slab bacon, buckboard bacon, lardons, Irish bacon or Rashers, peameal bacon, speck, guanciale, szalonna, lap yuk, and vegan bacon. However, the most popular here in America are:
American-style bacon, aka “streaky” bacon, is cut from pork belly and cured in salt and spices, and can be smoked. Varieties are created by the type of wood smoke, like hickory, pecan or apple, and some popular flavors are maple and black pepper.
Pancetta, an Italian bacon is thinly sliced showing a spiral of meat and fat. Made from pork belly and cured with spices like clove, rosemary and juniper, use of Pancetta adds a delicate bacon flavor to main dishes and appetizers.
Canadian bacon, from the pork loin and cut from the middle back of the pig, is leaner than regular bacon. And, as it’s cured and smoked with a flavor closer to that of ham, is wonderful when used for Eggs Benedict.
“Uncured” bacon has no artificial or sodium nitrates that are sometimes present in regular bacon. Plus, consumers opt for uncured bacon so they have more control over the seasonings and cooking process.

SOCIAL DISTANCING PROTOCOL
Cheat A Little Catering maintains strict adherence to all food safety regulations for cleanliness and food preparation, as mandated by the San Mateo County Health Department. Our Social Distancing Protocol includes: employees are prohibited from working if they are experiencing any illness; those working maintain six-foot distance and ensure no physical contact, and work alone on different shifts whenever possible; facility is cleaned and sanitized at the beginning of work times, in between stages of food preparation, and at the end of work times; high-contact surfaces are disinfected frequently; non-employees are not permitted at our place of business; we require contactless payment system.
