For many older adults, home has been the same place for decades and the thought of relocation is full of emotion. Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 sweet potato, peeled and diced
- 1 zucchini, chopped
- 1 can (14 oz) diced tomatoes (no added sugar)
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup kale or spinach, chopped (optional)
- 1 tablespoon lemon juice
- 1/2 cup cooked quinoa or barley (optional, for added texture)

- Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until softened, about 3-4 minutes.
- Add the carrots, celery, and sweet potato. Stir and cook for another 5 minutes.
- Stir in the zucchini, diced tomatoes (with juices), vegetable broth, thyme, oregano, salt, and pepper. Bring to a boil, then reduce the heat to low and let it simmer for about 25-30 minutes, or until all vegetables are tender.
- If youâre adding kale or spinach, stir it in for the last 5 minutes of cooking.
- For extra heartiness, add cooked quinoa or barley, then stir in the lemon juice just before serving.

- 1 cup dark brown sugar, packed
- 2 large eggs
- 1/2 cup molasses
- 1/2 cup hot water
- 1 teaspoon vanilla extract
For the Lemon Glaze

- Zest from 1 lemon

Instructions

- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round or square cake pan.
- In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
- In a large bowl, cream the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
- Stir in the molasses and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with hot water. Begin and end with the dry ingredients. Mix until smooth and combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- For the glaze, whisk together powdered sugar, lemon juice, and lemon zest until smooth.
