 It’s the most wonderful time of the year and the happiest season of all as we celebrate God’s most precious present to the world – the gift of His son, Jesus Christ! This present is available to anyone who will ask Jesus into their heart. And, if you do, He promises to fill you with His presence and give you peace.

At One Bistro, our present to the community is our commitment to share hope and love through delicious food! We certainly hope you feel the presence of community when you dine with us and we hope you leave with your bellies and your hearts full.

Chef Greg's Corner!
This month Chef is sharing Mirepoix, pronounced meer-PWAH, the flavor base of vegetables for soups and stocks. This French flavor base is a combination of onion, celery and carrot. The ratio used is 2 parts onion to 1 part celery and carrotThese aromatic vegetables are the first layer of many recipes.

Prepare the vegetables: rinse the celery, scrub the carrots and pat both dry and peel the outer layer of the onion..

Chop the vegetables: onion, celery and carrot in a size suitable for what you are cooking. Chop small (¼-inch to ½-inch) for sauteed recipes, chop medium (½-inch to 1-inch) for soups and stews and chop large (1-2 inches) for stock or broth

Cook the vegetables: Add butter, olive oil or vegetable oil to a large skillet set over medium-low heat. Add the onions, carrots, and celery. Stir to coat the vegetables well. Cook, stirring often, for 10-12 minutes, or until softened and onions are translucent. Adjust heat to prevent vegetables from browning.

And Voilà, you have Mirepoix!


At Community Meal recently, Asher was disappointed to hear we were having Chili because he doesn't really like Chili. After tasting it, he said, "Chef Greg is a magical chef! He makes everything that fits my taste-buds exactly."

Below we are featuring a few volunteers who have participated in the Volunteer Training Session hosted by Shayne each month.
Meet volunteer, Marcy Lewis! Marcy appreciated the volunteer training session because she liked getting acquainted with the layout of the restaurant in a relaxed setting with Shayne’s full attention and it was a great way to catch Shayne’s passion and energy for One Bistro and its mission. Marcy recommends the training to anyone interested in volunteering and says, “It simply makes volunteering more effective and satisfying when you know what to expect and can pitch right in, as opposed to standing around and waiting for constant instructions.” Marcy said she “loves serving guests and seeing them not only appreciate the quality of our food, but also their enthusiasm for One Bistro’s mission.”
Meet Eric and Kim Shoemaker who also participated in a Volunteer Training Session. Eric liked that you got to learn the different roles, see how things should flow during a normal day and where you can find the things you need to do any job. And Eric added, It gives a person a good feel for what to expect, especially for those like me who have no experience in the food service industry.” Eric has volunteered by handling drink orders, busing tables, washing dishes and hosting. He likes it all and said, “It doesn’t matter where I work because we succeed, and fail, as a team.”

Christmas Window Contest
We love the decorated windows around town each Christmas season. This year we contacted Legacy Christian Academy in Xenia to see if their students could help us with our window decorating. Within a few discussions with the high school art teacher, Jennifer Burtnett, we had a contest underway. The winner’s design would be used, they would receive a $25 gift card to One Bistro and a One Bistro t-shirt.

The students were given a drawing of our storefront and asked to create a design that could be painted on our windows. We gave them a few guidelines and invited them to put their creativity to work. And wow, did they create. The students submitted so many terrific drawings it was very hard for us to select the winner. We selected the design by Senior, Ashlea Roe. We had four runner-ups; Senior, Paige Daulton, Junior, Yuki Zhao, Sophomores, Hannah Stover and Audrey Stanley. Each runner up also received a One Bistro t-shirt.

On November 30, all five students along with Jennifer Burtnett (High School art teacher) and Terra Stanley (Elementary art teacher) spent the day at the bistro painting our windows for the Christmas holiday season. Chef Greg cooked up some pizzas for lunch and then to further bless their community, the students walked across the room to the windows of Toward Independence and free painted their windows with another fun and fabulous design.

Please come and visit the bistro and see the beautiful work of the students. We are so grateful for this opportunity and for the community connection!
