HOLIDAY RECIPE OF THE WEEK

Overnight Apricot-Filled Scones

Dough Recipe

2 1/2 cup all purpose flour

1/4 cup sugar

1 tbsp baking powder

1/2 cup unsalted butter; cold, cut into cubes

2 large eggs, beaten

1/3 cup + 1/3 tbsp whole milk

1 tsp vanilla extract

3/4 cup apricot jam


For Topping

1 large egg, beaten - for egg wash

1 tbsp whole milk

Turbinado sugar - top sprinkling

  1. Lightly grease a 9" cake pan & line with parchment paper for easy removal after baking.
  2. In a medium bowl, whisk flour, sugar, baking powder and salt. Add butter cubes and toss to coat flour.
  3. Use your hands to break the butter down into pea-size bits. Work quickly so the butter doesn't warm to much. T
  4. In a small bowl, whisk together eggs, milk and vanilla extract. Create a well in center of dry ingredients and add egg mixture all at once. Stir until combined.
  5. Transfer dough to a lightly floured counter and gently kneed and press into a disk. Divide in half. Working with one portion of dough at a time, press and roll each half into 8" rounds, 1/2" thick.
  6. Place one dough round in prepared pan and spread with apricot jam, leaving about 1" of border along the outside of the round clean. Top with the remaining dough piece and gently press along the edges. Cover and refrigerate overnight.
  7. When ready to bake, uncover. Set oven at 375 degrees. In a small bowl, whisk egg wash and milk for egg wash. Brush scone on top with egg wash. Sprinkle scone with Turbinado sugar.
  8. Bake for 28-30 minutes until deeply golden on top. Remove from oven. Allow to cool for 5 minutes before removing from pan. Slice into 8 equal wedges. Delicious!!
