Humans began making cheese seven millennia ago: plenty of time to develop an enormous variety of textures, flavors, and smells, and certainly more than enough to get creative about the methods of generating even greater variety. But it seems to have taken all that time for us to come around to the potential of music as a flavoring agent. Exposing cheese to round-the-clock music could give it more flavor and hip hop might be better than Mozart.

Nine wheels of Emmental cheese weighing 22 pounds each were placed in wooden crates last September to test the impact of music on flavor and aroma. The hip hop cheese heard A Tribe Called Quest's "Jazz (We've Got)," the classical cheese Mozart's "Magic Flute," the rock cheese Led Zeppelin's "Stairway to Heaven," and so on.

Three other wheels heard simple low, medium, and high sonic frequencies, and one control cheese heard nothing at all. But perhaps "heard" is the wrong word: each maturing cheese received its music not through speakers but "mini transmitters to conduct the energy of the music into the cheese."

Gibson made around 1,500 sunburst Les Paul's between 1958 and 1960, but today, only 2,000 survive. That's the joke that keeps Burst fans awake at night. You don't get it? Such a valuable guitar is inevitably the target of fakers, so the original run of around 1,500 has been, shall we say, "supplemented" by quite a lot of forgeries. It's one of those jokes designed not so much to make you laugh, but rather to make you think.   
IN THE BASSMENT 

Whether we're getting ready for a gig, a practice session, or just going over to a friend's house to jam, it's a good idea to be aware of the foods you eat or when you'll get a chance to eat. ARTIST AWARENESS

The late Jessie Mae Hemphill is a legend of hill country blues. Born in 1923, she grew up in a lineage of familial fife-and-drums bands from northern Mississippi. She rose to popularity in the mid 1980s and had a fruitful career during which she performed around the globe, traveling mostly on her own. In 1993, a stroke left Hemphill unable to play with both hands, but as this 2005 interview reveals, her independence and faith allowed her to persevere and accept her circumstances with grace. Hemphill died in 2006.c.
