Dear Neighbors,
I hope your summer is happily underway and you are looking forward to the sunny days (finally) forecast for this month!
The Caucus Committee currently has two open positions each in Wards 2 and 3.
The Caucus Committee meets for 2 hours every two weeks from September through April. In addition, Committee members are asked to volunteer on search and other sub-committees that may take 3 hours a week of your time. The mission of the Caucus Committee is to identify, recruit, interview, and recommend qualified candidates to serve on the Boards and Commissions of the City of Lake Forest, as well as School Boards. The Lake Forest Caucus is a non-partisan organization that seeks to promote civic engagement. A full term on the Caucus Committee is 3 years and an individual may only serve once. Serving on the Caucus Committee is a wonderful way to meet and collaborate with our neighbors, learn more about municipal government, and strengthen our community.

Ward Chairs will reach out to conduct initial interviews and will be happy to answer any questions you may have before and during the process. For June, we thought we would pull together some fun recipes from Committee members to share with our readers. You can find them all on our webpage here, including gluten-free options! I have included a couple of them below.

e hope to see you at Lake Forest Days on August 1st and 2nd. The Caucus Committee will participate in the Parade on Wednesday, August 2nd, and we will also volunteer at Lake Forest Days events. More information can be found here.

Lake Forest Caucus
Chicken Skewers
Ingredients
- 2.2 lbs/1kg of boneless chicken, cubed
- 500g plain yogurt
- 4 garlic cloves crushed/paste
- 1 lemon, juiced
- 2 tbsp olive oil
- 1-2 tsp cumin powder
- 1-2 tsp salt
- 1-2 tsp paprika powder
- 1 pinch turmeric powder – optional
Directions
- Adjust spice quantities per your own taste. Marinate the chicken in remaining ingredients for at least 4 hours or overnight. Skewer chicken pieces and grill as usual. Alternatively, cook in the oven at 200C/395F for 45 minutes or until golden brown. Serve with naan or choice of bread and cucumber raita.
Cucumber Raita (Yogurt Dip)
Ingredients
- 250g plain yogurt
- 1/2 tsp salt and black pepper to taste
- 1 scant tsp dried mint
- 1 mini seedless cucumber shredded (I use a box grater with care!)
Directions
- Mix all ingredients, et voila! Enjoy with pita chips or as a condiment with grilled meats and rice.
Pimms Cup
Ingredients
- 2 ounces Pimm’s No. 1
- 1/2 ounce lemon juice, freshly squeezed
- Ginger ale, to top
- Garnish with: cucumber slice, mint, strawberry, lemon wheel (optional), orange wheel (optional)
