The artisanal cheese movement is growing very strong in the U.S. and right here in our own state of Maryland we have three incredible cheesemakers. I have had the pleasure of visiting the farms, meeting the cheesemakers, getting up close to the cows and goats and I can only say that if you haven't yet tasted these cheeses you are really missing something wonderful. Each cheese is carefully hand-ladled into molds and each one goes through a very different aging process to bring out its best flavor. If you have a chance, please swing by.

Merry Goat Round
Country: Maryland, USA Milk Type: Pasteurized Goat's Milk Cheese Type: Bloomy Rind Merry Goat Round is a surface-ripened goat's milk round about 10 ounces in weight. Made by hand at Firefly Farms in Accident, Maryland, it their homage to brie or camembert and shares the same surface ripening mold as these traditional cheeses. It ripens from its rind inwards, growing progressively softer and creamier. The rind is completely edible at any stage of the cheese's ripening. In fact, the cheese's fullest flavor is concentrated in its rind. The farm is in the process of building its new cheesemaking facility which will open in May. Pair Merry Goat Round with Sauvignon Blanc or other crisp whites. |
Monocacy Ash Country: Maryland, USA Milk Type: Pasteurized Goat's Milk Cheese Type: Surface Ripened
Monocacy Ash is a soft-ripened half-pound cylindrical shaped artisanal soft-ripened cheese, produced in small batches by Diane Kirsch (the last name is German for "Cherry") and her herd of American Alpine and Toggenburg goats. It is more tangy and flavorful than most Brie but ripens to a similar creamy internal consistency. As with Brie, many prefer to eat the rind with the cheese. Ithas an edible ash coating and ash line through the center.

Talbot Reserve
Country: Maryland, USA
Milk Type: Raw Cow's Milk
Cheese Type: Semi-firm
Talbot Reserve is in a different category of cheddars. Made with fresh raw milk from grass-fed Jersey and Holstein cows, it is shaped into a square block and aged for over 12 months. The bloomy rind is new in the world of cheddars but we find it aesthetically pleasing. Made by Holly Foster of Chapel Creamery outside of Easton, Maryland Talbot Reserve is recognized as the first raw milk cheese of Maryland. Currently Maryland does not allow raw milk cheeses to be aged within the state so the creamery works with a cheesemaker and affineur in Pennsylvania to perfect this cheese.
It is well-suited to Chardonnay.

After successfully creating her prize-winning cheddar, Talbot Reserve, Holly Foster's newest creation, Bay Blue has equal uniqueness and complexity. Nutty and crystallized, this blue hits our medium-intensity on the blue scale. |
