Life on the Ranch

Native Prairie Association - Fayette Prairie Chapter Visits 3H

Almost every day Lori and I reread our Hessel Family 3H Ranch Mission Statement, "Raising free range, hormone-free grass fed and finished beef for families and others while ecologically and economically restoring and sustaining the soil and grasses in our pastures.”

In the past few months, we have hosted two field trips of like-minded folks from the Texas Native Prairie Association of Texas (Fayette Prairie Chapter) as well as the Xerces Society. Through the learnings from these field trips and other research, we are seriously considering adding the word “NATIVE” before the word “grasses” in our Hessel Family 3H Ranch Mission Statement.

Our ranch has some of the Big Four Texas Native Grasses: Sideoats, Grama, Little Blue Stem and Indian Grass. We are learning these native prairie grasses are very drought resistant, need no chemical fertilizers, and create a deep web of roots which can capture atmospheric carbon below ground which helps our planet. We have also further learned that these native prairie grasses are thoroughly enjoyed by our cattle herd and our cattle herd performance on our grasses is exceptionally good. We will continue taking active steps to re-establish these Texas native prairie grasses on 3H Ranch.

Summer BBQ Hamburger Cook-Out

It's the season for BBQ! Check out one of our favorite recipes by our very own, Lori

  1. Divide one pound of 3H Ranch ground beef into three or four equal balls.
  2. Handle meat lightly so you do not overwork and make it tough.
  3. Heat a grill or griddle.
  4. When the griddle is hot, place ball of meat on griddle and smash thin with a spatula.
  5. This will make craggy edges that will crisp as the patty cooks.
  6. Let Patty cook for three to four minutes until the surface is crispy brown.
  7. Flip and sear other side.

At this point, you can add condiments to melt/meld into the meat.

Condiment suggestions:

  1. Manchego cheese and prosciutto
  2. Barbecue sauce and cheddar cheese
  3. Pimento cheese and bacon

Off grill try:

  • Sautéed onions
  • Arugula
  • Vine ripe tomatoes
  • Crispy pickles

Serve on warmed bread of your choice or salad and enjoy!

3H Ranch Hay Feeding Technique

Did you know? Here at 3H Ranch, David unrolls the hay for the cows so that they have a very stress-free way of eating. 🐂

Any hay left, fertilizes and composts back into the Earth.

David also adds Texas Native Prairie Grass seed into the hay that is harvested here 🌱

David and Lori Hessel: 3H Ranch Owners

We are grateful to God for the inestimable blessings we enjoy. We care about being great stewards of land and animals.  We are big followers of Aldo Leopold.

As he would say, “When we see land as a community which we belong we may begin to use it with love and respect”
