Fiesta Salsa/Salad

2 cups Tomatoes (fresh, diced, and drained)
2 cups Avocado (diced)
2 cups Corn (raw, sliced off the cob)
1 can Black Beans (whole, organic, drained and rinsed)
1 Mango
1 Onion (finely diced)
1 cup Cilantro (leaves, rough chopped)
Lime Juice to taste

Best to use tomatoes, avocado, and mango that are still slightly firm so they do not fall apart in the salsa/salad. Add corn, tomatoes, avocado, black beans, onion, and cilantro into bowl. Gently toss to mix. Add lime juice and cayenne to taste. Gently toss. Best served when fresh and chilled.
Optional: As a salad, best served on a bed of greens with a wedge of lime and topped with chicken, or your favorite lean protein.
