This March, CAPS: The Center for Advanced Pastry Studies dives into the art of award-winning desserts with the launch of our "New York City 4-Star Restaurant Modern Dessert Series."
In our first 4-star class, Executive Pastry Chef Joe Murphy of the much-loved and New York Times 4-star-rated Jean-Georges will teach the art of modern entremets. Literally meaning "between courses," Joe's recipes and techniques will show you how to make your desserts more along the lines of "showstoppers."
Featuring classic flavors like Green Tea Opera Cake, innovative ingredients like Chestnut Cake with Black Currant Marmalade, and playful combinations like Peanut Butter-Caramel Mousse with Candied Bacon and Bananas, this one-day class appeals to every style of chef. Each entremet will be adorned with modern garnishes, teaching students how to build on and enhance your signature pastry style.
