Casaloste is a 25-year-old estate nestled in the hills of Chianti Classico's Panzano area. With total production of only 5,000 cases, this certified organic winery is all about hand-crafted, small-batch, high-quality wines. Vibrant, bold, plush and very well balanced, this 2015 bottling combines lush, ripe, dark fruits with  old world nuances of herbs and earth. The 2016 Ca' dei Zago Prosecco is made in the "Col Fondo" style. Col Fondo translates from Italian as "with the bottom" which describes the sediment you will find at the bottom of each bottle. Handcrafted by Christian Zago from 50-year-old vines on his small six-hectare, biodynamic estate, this lees-aged Prosecco is bone dry, funky, and quite nuanced.

While most Prosecco is light, fruity and, admittedly, a bit simple, the Ca' dei Zago is all about subtle, focused flavors that push the limit of just how complex a wine the Glera grape can produce in the Veneto region. Don't be alarmed if the wine is cloudy, that just means it's unfiltered, natural, and full of flavor.

"This lightly sparkling, terroir-driven wine is loaded with soul and finesse. It's ethereal and bone dry, with delicately alluring aromas and flavors of white spring flower, ripe apple, Bartlett pear, citrus and Alpine herb. Crisp acidity and a silky mousse provide balance and finesse while a mineral note energizes the focused finish. The sediment at the bottom of the bottle adds even more flavor to the last glass."
