Valley Milkhouse
And the Secret's Out!
This Saturday, Valley Milkhouse debuts a NEW aged cheese from the cave, and it's a CHEDDAR! That's right, the cheesemakers have been keeping these wheels a secret while aging them to perfection over the past 4 months. And this cheddar is not your average store-bought shredding cheese. After cheddaring, the wheels are pressed and then bandaged in cloth to keep in the moisture and develop a distinct flavor around the rind. This clothbound cheddar, still in its experimental phase, is a traditional English style with notes of hazelnut, butter and a hint of horseradish. Pair it with any of Scholl Orchards' sweeter red apples and a crusty bread from the Flour Shop.

In addition to the cheddar, Valley Milkhouse will be bringing back its beloved Gouda style, aged for 4 months and creamy with sweeter, nutty notes. Other featured cheeses include luscious Thistle - perfectly ripe this time of year, Witchgrass, fudgy Blue Bell and creamy Clover fromage blanc. Stay tuned to next week's newsletter to tap into a Thanksgiving pre-order special!
Now taking orders for your Thanksgiving cheese board!
This Thanksgiving, feature a local artisan cheese board from Valley Milkhouse! To help you build it, Stefanie is offering a selection of three styles for $25. It starts with Clover, the beloved pillowy cloud of fromage blanc adorned with a locally grown herbes de provence mix; it's the cheese that suits every palate and can be dressed up with herbs, spices, or honey. Then choose a soft-ripened cheese: Witchgrass or Thistle, for a luscious and funkier edge. Finally, choose a harder aged cheese: Blue Bell, Lady's Slipper or Gouda, for deeper complex flavors. Email your order to for pickup on Saturday, November 17 or stop by the stand to chat cheese and pairings with the makers!
