Greetings,
DID YOU KNOW that farmed-raised salmon has a significantly different fatty acid makeup than wild-caught salmon?
The authors of a study from Frontiers in Nutrition purport that food analysis data need to be updated much more frequently than they are currently.
For example, the fatty acid profile of farmed Atlantic salmon demonstrates fatty acid differences not listed in current datasets. When tested recently, the new profile was 2.4-fold higher in linoleic acid and 3.4-fold higher in α-linolenic acid than listed, with decreases in eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) concentrations. This means that levels of omega-6 fatty acids have increased and omega-3 fatty acids have decreased exponentially.
We knew that farm-raised salmon had much less EPA and DHA omega-3 fatty acids than wild-caught, but the difference between the two is now even more vast.

Steve: A sweeping new scientific statement from the American Heart Association, published in the journal Circulation, reviewed decades of research and states that for most adults, up to about 400 mg of caffeine a day - roughly three to five 8-ounce cups of brewed black coffee - is safe and doesn't raise cardiovascular risk.
Furthermore, they state that moderate coffee drinkers tend to have lower rates of type 2 diabetes, stroke, heart failure, and heart disease, and the belief that cardiologists held for a generation - telling anyone with palpitations to quit caffeine - is no longer valid.
As with all sweeping statements, there is nuance. Not all caffeine is created equal and there are numerous individuals who cannot drink coffee at all. Let's keep in mind this statement was only about heart health. Let me remind you of the following:
- Coffee isn't just liquid caffeine. It's a complex brew of more than a thousand active compounds, and many of the benefits likely come from those, not the stimulant itself.
- Brewing method affects your cholesterol: unfiltered coffee like French press, Turkish, or boiled coffee contains a compound called cafestol that raises "bad" LDL cholesterol, while paper-filtered and instant coffee strip it out and have essentially no effect.
- Heart-friendly findings apply to actual coffee and tea, not to energy drinks, shots, or pre-workout powders.
- Coffee's benefits are negated when sweetener and most types of milk and cream are added.
- The scientific statement did not take into consideration genetic variation. Those with partial or full caffeine mutation are still at risk in the amount suggested by the AHA statement.
- Those with past or current history of reflux/GERD should avoid coffee as much as possible.
In conclusion, black coffee has a role in preventive health, but as with most things nutrition, consumption needs to be individualized.

A middle-aged women came to see Steve presenting with hives, nummular eczema, light-headedness and dizziness, moderate hair loss, and environmental allergies. Her blood work showed a weakened immune system, high acidity, and acute inflammation.
Steve had her focus on limiting acidic foods and those with high salicylic acid, as well as being aware of foods that highly cross-react with outdoor pollens. She also eliminated certain dietary supplements that were making things worse and replaced them with ones that would help.
In short order, her dizziness decreased dramatically and was completely eliminated at month six. Her hives resolved completely and while her nummular eczema is still there, it is much less and not raised and red. She has significantly reduced allergy symptoms. Her hair loss has abated.

| | Thermography Cannot Detect Brain Tumors | | |
A recent scenario had me investigate if Thermal Imaging ever detected a brain tumor and a blog from Serenity Health Care Center suggested that it could. I then reached out to a Clinical Thermographer who has been serving clients since 2011. I sent her the article and asked if indeed the information was correct, that one could assess the brain with a Thermal Scan. She responded that Thermography CAN’T be used for the brain. That there are no applications for brain scanning with Thermography. The only imaging technologies for brain scanning would be PET, CT or in some instances MRI.
I was glad that the clinical Thermographer set me straight and upset that the other article made it seem as if this technology would have the capability to measure hotspots emitted from the brain through the skull to detect a potential tumor. Thermal scans have the capability to detect heat rays that are emitted from many areas of the body. These can indicate either infection, inflammation, or in some instances the heat that is being released by rapid cellular growth of a tumor in the body, but not in the brain.
Brain tumors are a serious condition and according to MD Anderson there are many signs of a brain tumor to be aware of. A headache that becomes more frequent as time passes and no treatment helps. Seizures, numbness, tingling, convulsions, nausea or vomiting may also be signs. So too changes in speech, vision, taste, smell, hearing, and energy levels. Sudden depression, anxiety, changes in mood or behavior could be an indicator as well. There may also be loss of balance, coordination or concentration and the list goes on of symptoms that can be associated with this serious issue. Even though Thermography scans won’t pick up on hotspots in the region of the brain, they offer the benefit of detecting potential problems elsewhere in the body.
