FIMRC Becomes Aid for Africa Member & CFC Charity

FIMRC is one of seven new participating members of Aid for Africa, a unique partnership of nonprofit organizations serving families and communities throughout Africa. This membershi p grants us the privilege to participate in the Combined Federal Campaign (CFC).
The CFC annual giving campaign runs from September 1 to December 15 and provides Federal civilian, postal and military the opportunity to donate to non-profit organizations with a focus on health and human services through a one-time donation or a payroll deduction. FIMRC's CFC # is 11019. Spread the exciting news with friends and family that are eligible to contribute!

FIMRC Ambassador Highlight: Team HQ

FIMRC HQ has had the privilege of collaborating with three Ambassadors this summer. This topflight team is made up of Alison Foster, a soon-to-be junior at the University of Michigan, Jennifer Oh, also entering her third year at Brandeis University, and Mahmoud El-Youssef, our legal intern who hails from Georgetown Law, with two years standing between him and his J.D.
All three have contributed in innumerable ways. For brevity's sake I will list a few projects that their support has been nothing short of instrumental. Alison's impact with the Chaptership Program and future resources will bear fruit throughout the course of the 2010-2011 academic year. Jennifer's ability to turn patient and project data into engaging narratives will be to the delight of our audience in coming months. And last but not least, Mahmoud has ensured that the all of our ducks are in a row with respect to contracts, customs, and donation compliance laws.
Our heartfelt thanks go out to Alison, Jennifer and Mahmoud. It's been great hosting you in Philadelphia!

Fresh Recipes Straight from Las Delicias

August brings humid summer days and friends enjoying each others' company at picnics and BBQs as summer draws to a close. These delicious recipes were part of a Healthy Foods Fair at our project site in Las Delicias, El Salvador, during which attendees were taught how to incorporate healthier alternatives into traditional dishes to increase nutritional value while staying true to cultural roots. They say the way to someone's heart is through their stomach - share these recipes with your loved ones, and while you're snacking, tell them about the work we do in Las Delicias, El Salvador!
Delicioso Black Beans (serves four)
Ingredients: 2 cups black beans, cooked (with broth); 1 small chopped onion; 1 clove minced garlic; 1 tablespoon chopped cilantro; salt to taste Preparation: Combine the beans, onion, and garlic in a pot and boil the mixture until the beans soften. When the contents are boiling, add the chopped cilantro and salt to taste. Turn the burner to low, and cook over low heat for six minutes. Breakfast Burritos (serves four)
Ingredients: 4 chopped eggs (hard-boiled or scrambled); delicioso black beans; 1 sliced onion; 1 sliced green chile; � teaspoon of oil; chopped tomatoes; avocado slices; shredded cheese; 8 thin corn tortillas Preparation: Pour the oil into a pan and sautee the onion and chile for five minutes. Place the eggs, black beans, sauteed onion and chile, and other fixings within the burrito and roll. Melt cheese on top of the burrito for an added twist!
Alex's Guacamole - in honor of former FOM Alex Kelly! (serves four)
Ingredients: 3 medium-sized avocados; 2 medium tomatoes; 1 onion; black pepper; dried garlic; chile; salt; lemon juice Preparation: Open 3 avocados, remove the flesh, and mash with a fork. Finely dice the tomatoes and onion, and combine them with the avocado in a bowl. Next combine the chile, dried garlic, black pepper and lemon juice, testing frequently to obtain the flavor profile you prefer. Finally, add salt to taste.
Papaya and Avocado Salad (serves four)
Ingredients: 2 large avocados (or 3 medium avocados); 1 small papaya; 1 sweet orange; lettuce or cabbage; 2 teaspoons of oil; lemon juice; black pepper; salt Preparation: Cut the lettuce and/or cabbage into strips and place in a bowl. Cut the avocado flesh into slices. Remove the rind from the sweet orange and slice the fruit. Alternate laying the avocado and orange strips over the bed of lettuce for presentation. Mix the oil, lemon salt and pepper in a cup for dressing, and drizzle over the salad. Serve cool!

FIMRC Team Member Highlight: Dr. Eduardo Quevedo
|
Eduardo's tenure as Clinic Doctor at Project Las Delicias came to a close last month. Fortunately for the foundation, this isn't adios. Eduardo is chasing his dream of becoming a licensed physician in the United States, with his first stop in Ohio through a Cleveland Clinic Observership.
As evident in the pictures below, Eduardo formed lasting relationships with those he served. One way Eduardo will stay connected to the community of Las Delicias while away will be through consultation with the national office and site staff. Thank you, Eduardo, for your compassion, expertise, and leadership!
