Makes 12 pupcakes
1 cup whole wheat flour
1 tsp. baking powder
¼ tsp. baking soda
¼ cup plain yogurt
2-1/2 T. vegetable oil
2 T. honey (or sweetener of choice)
½ apple finely diced
½ cup grated cheddar cheese
¼ cup carrots, finely diced
- Preheat oven to 350 degrees.
- Line muffin pan with cupcake liners. In a large bowl, combine flour, baking powder and baking soda.
- In bowl of mixer, blend together the yogurt, vegetable oil, honey and eggs; then stir in apple, cheese, and carrots. Add flour to the mixture and stir just until mixed. Batter should be a little lumpy.
- Fill liners 2/3 full with batter. Bake for 15-20 minutes, or until toothpick inserted comes out clean. Let pupcakes cool for 15 minutes, then the eating can begin.
My grandniece found this recipe in a book, and copied it down with her 2
grade handwriting, for her dog loving aunt. Every summer when she comes to Hawaii to visit, it is a tradition that we make these pupcakes for my dogs to enjoy. They gobble it up. - Aimee Kaneko
