Phillis Carey's
Recipe of the Week Email
September 20, 2019

I'm sure you have all seen my new Fall/Winter cooking class list . If you missed last week's email you'll find all the new classes listed below. My last remaining classes in September and October are full. There will be no classes for a month while I'm cruising the Mediterranean and recovering!

I did manage to leave off the class price in last week's email--kind of an important detail, but only a couple of people asked about it and most signed up for classes without knowing. Thanks for your confidence.

All the classes are $55 by the way. Hope you will all look over the classes and register soon--many of the classes are full already but there is still plenty that are available.

Dee Biller (I know many of you have taken classes with her over the years) and I enjoyed a fun Happy Hour at Vigilucci's in Leucadia this week. We sat and shared what's going on in our lives for a couple of hours over drinks (I had my favorite Sidecar! and it was really well made) and some Bruschetta and a tasty Green Goddess Salad. They have someone who plays the piano just about every night. Fun time!

This Saturday I'm meeting a friend for another Happy Hour at Red O--Rick Bayless' restaurant in La Jolla across from UTC (or whatever they call it now). I hear good things and I'll report back next time.

The Cruise is getting so close now. I'm getting really excited. I swear every day that I will start getting my stuff together! I guess I'll wait until the last minute as usual. Sigh...

Things just keep coming up--new windows so I need new draperies and blinds. But that means I need new rods and to put them up. I currently have a sheet hanging in my kitchen window to afford at least some privacy!

I also need to finish up my talk about food and customs around the Mediterranean that I'll be giving on the ship. I really get into it and then something pulls me away and a few days go by. Another Sigh... I do work well under pressure though.

It's the perfect weather to whip up a new dish this weekend. Try my featured recipe if the weather stays cooler. The Tortilla Crusted Salsa Chicken is so good and so easy but you do need to bake it in a 450 degree oven.

If you in the mood for a new cocktail now or all through the fall, look no further! This Sparkling Amaretto Sour is perfect and just a bit to easy to drink!
Enjoy your weekend, stay cool and cook up something new to share with your family and friends!

Until next time, keep cooking and eat well! Phillis

SPARKLING AMARETTO SOURS
Makes 1.
1/4 cup water
1/2 cup sugar plus 1/4 cup for glass rim
Zest of 1 lemon and 1 lime
Juice of 1/2 lemon (2 T.), reserving
second lemon half
3/4 cup Prosecco
2 T. Amaretto liqueur
Ice Cubes
Lemon and/or lime slices for garnish

1. To make simple syrup, combine water and 1/2 cup sugar in a small saucepan. Heat over medium heat and bring to a boil, stirring occasionally until sugar is dissolved; cool.

2. To make sugar rim, combine 1/4 cup sugar with the lemon and lime zest on a small plate. Rub reserved lemon half around the rim of an old-fashioned glass. Coat the rim with the sugar/zest mixture.

3. In a small pitcher, combine the Prosecco, Amaretto, lemon juice and 2 T. of the cooled simple syrup. Pour over ice in the prepared glass and serve immediately.

TORTILLA-CRUSTED SOUTHWESTERN
SALSA CHICKEN WITH LIME AND HOT PEPPER CHEESE
Serves 4.
4 boneless skinless chicken breasts
 Salt and pepper to taste
1/2 cup sour cream
1/4 cup thick and chunky medium salsa
1 clove garlic, minced
1 T. fresh lime juice
1 T. chopped fresh cilantro
2 cups coarsely broken tortilla chips
3/4 cup grated jack or jalapeño
jack cheese

1. Preheat oven to 450 degrees. Trim chicken and pound between two sheets of plastic wrap to an even 1/2-inch thickness. Arrange chicken on a parchment-lined baking sheet. Season chicken with salt and pepper.

2. In a small bowl stir together the sour cream, salsa, garlic, fresh lime juice and cilantro. Divide the mixture evenly among the chicken breasts and spread to cover the entire surface of each.

3. Toss together the tortilla chips and cheese. Mound on top of each breast, covering completely and patting down lightly. Bake for 12 to 15 minutes or until chicken is cooked through and topping is nicely browned.
