OCVA is recruiting Oregon chefs who possess the skill and passion to teach coastal culinarians how to: fabricate, break down and ultimately demonstrate various uses for the seafood and its by products or trim. It is our desire to inspire a coastal culinary culture where local seafood ingredients are the norm and can dominate the menus instead of being culinary anomalies!
We seek to connect coastal fishers with coastal chefs and other culinary professionals as each of these professions are critical to our visitor economy and countless others workers in the local food chain. To be successful, we are creating a training program that will be ongoing-coinciding with the seasonality of "the local catch". We want these skills widely shared to create a dynamic environment for learning.
