Chef's Spotlight
Spanish Rice
Ingredients:
2T Olive Oil
1c Green & Red Peppers, chopped
1c Yellow Onion, chopped
1 Jalapeño, chopped and de-seeded
2 Garlic cloves, minced
1c White Rice
3T tomato Pasta
1- 15.4oz can roasted diced tomato, un-drained
2c Chicken Broth
2tsp. Ground Cumin
1T Chili Powder
Salt & Pepper to Taste
Preparation:
* Saute peppers, onions and garlic
* Add tomato paste and cook for 3 minutes
* Add rice, broth, canned tomato, spice and salt & pepper.
*Let simmer for 25-30 minutes until done.
Serves 4

Spring is finally here! We are ready for the flowers to bloom and leaves to green. Soon, the farmers markets will open, and our chefs will be bringing plenty of fresh produce into the kitchen. It's always so invigorating to cook with such fresh ingredients!
Spring also means the start of a busy wedding season. Our docket for the coming months is full, which means happy couple after happy couple. After the relatively quiet months of winter, it's always wonderful to have the Ridge come to live with the energy of so many happy people celebrating one of the best days of their lives.
It is a time, indeed, to be invigorated!

If you aren't familiar with q
uinceañeras, they are similar to sweet sixteen parties and bat mitzvahs--however it's for a girl celebrat ing her 15th birthday. According to Wikipedia, in the United States, the term q
uinceañera refers to the celebration. Howev
er, "i
n Spanish, and in Latin countries, the term
quinceañera
is reserved solely for the honoree" (the birthday girl).
These can be lavish parties, sometimes costing as much as weddings. The dresses are ornate, guest count in the hundreds, and food plentiful. This traditional rite of passage is celebrated with lots of detail and love.
We have been receiving more and more inquiries for such celebrations, so we've recently designed packages specifically for quinceañeras. Our Chef's are testing out new recipes and our coordinators have been learning about traditions and trends for hosting this special day.

Our historian in residence, Chris Mackowski, has recently finished work on a new project.
His publisher, Savas Beatie, which produces the Emerging Civil War Series, is releasing the entires series on audio. The plan is to have all 33 books (as of right now) available by the end of the year. Chris has authored or co-authored ten books in the series, and the first two are now available: Hell Itself: The Battle of the Wilderness, narrated by Bob Neufeld, and Simply Murder: The Battle of Fredericksburg, narrated by Joshua Saxon.
Chris, a former award-winning radio newscaster, was also invited to narrate for the series. He recently completed the narration for The Great Battle Never Fought: The Mine Run Campaign. He plans to follow that up with Grant's Last Battle: The Story Behind the Personal Memoirs of Ulysses S. Grant.
Don't be surprised to see our own Traces of the Bloody Struggle: The Civil War at Stevenson Ridge, Spotsylvania Court House in audio sometime, too!
