Spring Outfitting is Here!
Spring's here and we all know what that means… outfitting season has begun. It's time to get the schooner Heritage ready for another year of sailing on Penobscot Bay! The crew has started to arrive and they are all hard at work keeping the schooner beautiful for us all to enjoy this season. After spending the winter working on the office end of the business, it's nice to break out the work boots and get back to some familiar springtime tasks.
The crew set right into varnishing spars, sanding, and painting at a rapid pace. So far, the weather has been beautiful with lots of sun and temperatures in the high 50s! We have to take advantage of weeks like this so we all climbed aloft to tar the rig and scrape the masts. Working with pine tar is a messy job for sure, but you can’t beat the view to the islands across the bay.

How many brushes does it take to paint the Heritage?

Maybe you've never thought of it before, but we are gathering supplies and here are 72 new paint brushes ready to gussy her up.

One new item is this easy to make Hash Brown Casserole added to our brunch. Perfect for special occasions, you will surely go back for seconds.

INGREDIENTS

  • One 26-30-ounce bag frozen shredded potatoes
  • Butter for baking dish
  • 1 T olive oil
  • 1lb spicy breakfast sausage
  • 1 medium onion finely diced
  • 1 cup milk
  • 1/2 cup half-and-half
  • 1/4 t seasoned salt
  • 1/4 t cayenne pepper
  • 4 large eggs
  • 1 green bell pepper finely diced
  • 1 red bell pepper finely diced
  • 2 cups grated cheddar cheese
  • 1 cup grated pepper jack cheese
  • salt and pepper to taste

DIRECTIONS

  1. Broil hash browns in oven till crisp and lightly golden brown, set aside to cool.
  2. Preheat oven to 350 and butter a 9x13" baking dish.
  3. Add the olive oil to a large skillet over medium heat. Add the sausage and onions and cook, breaking the sausage up until browned and cooked through, set aside to cool.
  4. In a large bowl, mix the milk, half-and-half, seasoned salt, cayenne, half of both cheeses, and some salt and pepper.
  5. Mix hash browns in with egg mixture and pour in buttered baking dish. Top casserole with remaining cheese.
  6. Bake covered for 25 minutes.
  7. After 25 minutes remove foil cover and bake for additional 20-25 minutes.
  8. Cut into squares and enjoy!
