LET'S TALK ABOUT

FOOD!

Let’s talk about FOOD!  As you feed your baby, use words to describe what foods taste, feel, and look like. “This yogurt is smooth. That yellow banana is sweet!” This builds their vocabulary and healthy eating habits.

COOKING AT HOME

Cooking Matters Recipe:

VEGETABLE LASAGNA

70 Minutes 8 Servings

Kids love to help in the kitchen and it is a great way to bond. Talk about the importance of food for self care. Have your child pick out fruit and vegetables to add to their smoothie. Together, experiment what is the tastiest.

Ingredients:

1 (8-ounce) package whole wheat lasagna noodles

3 cups fresh spinach

8 ounces button mushrooms

1 large zucchini

3 cloves garlic

1 (6-ounce) block mozzarella cheese

½ teaspoon salt, divided

1 teaspoon dried basil

1 teaspoon dried oregano

¼ teaspoon ground black pepper

1 (28-ounce) can tomato sauce or crushed tomatoes, no salt added

1 large egg

1 cup low-fat cottage cheese

Non-stick cooking spray

Instructions:

1. Preheat oven to 350°F.

2. Cook lasagna noodles following package directions. In a colander, drain and run under cold water until cool to the touch. Complete steps 3–9 while noodles cook.

3. Rinse spinach, mushrooms, and zucchini. Peel garlic.

4. Chop spinach. Thinly slice mushrooms. Dice zucchini into ½-inch pieces. Mince garlic.

5. Grate mozzarella cheese. Set aside ¼ cup grated cheese for topping lasagna.

6. In a medium bowl, add spinach, mushrooms, and zucchini. Stir in ¼ teaspoon of the salt. Set over a colander to drain. When completely drained, pat veggies dry with paper towels.

7. Stir garlic, basil, oregano, remaining ¼ teaspoon salt, and black pepper into canned tomatoes to make a sauce. Do this directly in the can.

8. In a medium bowl, crack egg and beat with a fork. Add cottage cheese and grated mozzarella. Mix.

9. Lightly coat a 9-by-13-inch baking dish with non-stick cooking spray. Spread ½ cup tomato sauce on bottom of dish.

10. Layer 3 noodles over sauce. Then, layer 1 cup cheese mixture, 1½ cups veggies, and ⅔ cup tomato sauce. Repeat layers 2 more times, ending with 3 noodles. Cover with remaining tomato sauce. Sprinkle reserved ¼ cup grated mozzarella over top of lasagna.

11. Bake until cheese is melted and lightly browned on top and lasagna is bubbly, about 45 minutes. Remove from oven. Let cool 10 minutes before cutting.

TIPS & RESOURCES

Kindergarten Readiness Goal:

+ Stand on one foot for at least 8 seconds

+ Identifies basic emotions of others and their causes accurately

+ Pretends to read using some of the language from the text, describes action across pages using pictures

+ Counts groups of 6-10 objects and labels which groups have less, more, or the same number of objects

+ Demonstrates scientific inquiry skills (observing, planning, predicting, sharing ideas about what happened, using tools such as magnifying glasses, rulers, scales to make observations)

DYSLEXIA & ATTENDANCE: WHY BOTH MATTER

Maggie Dwan

Dyslexia is a common learning difference that affects how individuals process written language, often making reading and spelling more challenging. Early identification and intervention can significantly improve outcomes for children with dyslexia—yet these steps depend on consistent attendance at school and related services.

When students miss class, they also miss valuable reading instruction and opportunities for educators to spot signs of dyslexia, such as difficulty matching letters to sounds or unexpected trouble with reading comprehension. Regular attendance ensures every child has the best chance at being evaluated promptly and receiving effective supports.

Families can help by:

  • - Ensuring children attend school every day unless they’re truly ill.
  • - Communicating concerns about reading difficulties with teachers or support staff.
  • - Seeking resources (e.g., reading specialists, literacy events, or community programs) if dyslexia is suspected.

If help is needed, please reach out to your local Great Start Collaborative! By staying on top of attendance and literacy milestones, we can give children with dyslexia the support they need to succeed!

At DYSLEXIA HELP AT THE UNIVERSITY OF MICHIGAN you’ll find free tools, reading tips, and guidance on identifying dyslexia early- all designed to help kids succeed in school. It’s a great starting point for anyone looking to learn more or find support.Dressing appropriately for winter keeps children warm, comfortable, and in school. Cold weather and illness can lead to increased absences, but proper winter gear helps ensure your child stays healthy and ready to learn.

IS YOUR CHILD ON TRACK?

crawling-hallway-baby.jpg

Families with children between the ages of two and five months residing in Saginaw County can complete a FREE Ages and Stages developmental screening or a social-emotional screening. Screenings take ten minutes to complete, and the results are back within a week. Results tell parents what to expect at each stage of development. Often times, early diagnosis can help give a child the best opportunity to reach their potential.

COUNT THE KICKS

One out of every 169 pregnancies ends in stillbirth in the U.S., and that rate is two times higher for Black expectant parents.

The link between fetal movement and a healthy baby is clear, but research continues to uncover more about the importance of tracking baby’s movements. Count the Kicks uses the latest research to help achieve our mission.

Count the Kicks provides free, evidence-based resources for expectant parents to stay informed and monitor their baby’s well-being.
