Recipe: Champagne Baked Ham

Champagne Baked Ham is a delicious dish that elevates any dining experience. This recipe showcases a tender ham, baked with the gentle sweetness of champagne. The blend of champagne, brown sugar, and Dijon mustard forms a delightful glaze that caramelizes during baking, yielding a juicy ham with a beautifully glazed surface.


Ingredients

  • Louie's bone-in half ham (8-10 pounds)
  • 1 cup champagne or sparkling wine from Louie's Lodge
  • 1/2 cup brown sugar
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground black pepper


Directions

  1. 1. Preheat the oven to 325 F.
  2. 2. Score the surface of the ham in a diamond pattern with a sharp knife, making cuts about 1/4 inch deep.
  3. 3. Make the Champagne glaze: In a small pan, combine the champagne, brown sugar, Dijon mustard, honey, ground cloves, cinnamon, and pepper. Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar dissolves and the glaze thickens, about 5-7 minutes. Remove from heat.
  4. 4. Bake the ham: Place ham in a large roasting pan, flat side down. Brush a generous amount of the glaze over the entire surface of the ham. Bake in the oven until heated through, about 1.5 to 2 hours. Baste with the glaze about every 30 minutes.
  5. 5. For the final 20-30 minutes of baking, brush the ham with more glaze. Increase the temperature to 400 F to allow the glaze to caramelize and create a golden-brown crust.
  6. 6. Rest and serve: remove the ham from the oven and let it rest for 10-15 minutes before slicing. Serve the ham with the remaining glaze on the side.

On the weekend of March 14-15 we attended the Minnesota Association of Meat Processors (MAMP) convention in St. Cloud to attend our neighboring state's convention and serve as judges in the Minnesota meat product competition. We were pleasantly surprised that Louie's Finer Meats was honored with the 2025 MAMP Outstanding Service Award at the Saturday evening banquet.

Louie's Brat Haus Opens on April 17!

A sure sign of spring - on Easter weekend Louie's Brat Haus will open for 2025!

The Brat Haus serves as a fundraiser for many local organizations - youth groups, charities, church groups, and more. Louie's Brat Haus will be open most Thursdays, Fridays, and Saturdays through the warmer months. The Brat Haus serves Louie's brats, hot dogs, pop, chips, and often some freshly baked goodies.
