Certification News
Currently, video reviews which are a part of the CSCE and CCE certification process are submitted and completed in tandem with the submission of the final application. Effective December 1, 2018, candidates must submit their video, video submission form, lesson plan and $50 Video Review Fee  at least six weeks prior to the application submission. The Final Fee has been adjusted to reflect the addition of the Video Review Fee; the total certification cost remains the same.

Be sure to review the criteria for CSCE and CCE Educator Videos to ensure you have met the requirements before submission and allow six weeks for review.
Evaluators and Administrators, look for emails coming out about your refresher webinars. You should receive them Thanksgiving week. Please contact the ACF National Office if you do not receive this email by December 1, 2018.
This week on We Are Chefs
From a culinary point of view, “stuffing” is what is cooked inside the turkey because, well, it is “stuffed inside.” What, then, is “dressing”? And why are the two often used interchangeably ?

How did the turkey become our go-to Thanksgiving entreé? It’s a story that involves the ancient Aztecs and more than one U.S. president, but probably not the Mayflower Pilgrims.
