Ludger's Bavarian Cakery

Ludger's Bavarian Cakery is a second-generation family owned business located in Tulsa, Oklahoma. The small business started off as a simple made-to-order bakery and has been able to grow into a retail bakery, coffeehouse and cafe due to the loyal support of the local community.

“FAPC has definitely been an integral part of that growth,” said Allison Dickens, owner of Ludger's Bavarian Cakery. “This outstanding group of individuals is an amazing resource and has been a tremendous support to us when we had a product problem we couldn't solve. Anything from supply sourcing to recipe problem solving, they are always helpful! We are grateful for our connection to this organization and, years later, we call them friends!”

Featured Research Project – Antimicrobials and Pre-harvest Food Safety in Cattle

FAPC Food Microbiologist Divya Jaroni’s most recent and on-going project focuses on the development of a direct-fed microbial (DFM) for the reduction of Shiga-toxigenic Escherichia coli (STEC) and Salmonella in beef cattle. This project stems from Dr. Stanley Gilliland's Lactic Acid Bacteria (LAB) cultures repository at Oklahoma State University. Several experiments are being conducted to select LAB for a DFM that could inhibit STEC and Salmonella in the intestinal tract of live cattle. The developed DFM will be further used in cattle feeding trials during phase II of this project. Funding for this project is provided by the Oklahoma Agricultural Experiment Station and OSU Technology Development Center.

While standing in a grocery store aisle, a consumer scans the shelves searching for the most appealing product. The seemingly informed shopper checks for the best deals and clutches onto products best suited for personal nutritional needs and health concerns.

However, the biggest threat isn't the extraordinary price or the temptation of the junk food aisle; it’s the misleading food label in plain sight.
