AUGUST NEWSLETTER

A word from the Horseshoe Bay POA

MESSAGE FROM YOUR BOARD OF DIRECTORS

Happy August Horseshoe Bay! The HSBPOA had a busy July and although there is no official meeting this month, your Board of Directors will continue to work on different ongoing projects. One of the projects being worked on is the aesthetic betterment of the different residential entrances in our community. We have approved conceptual drawings which retain the original aesthetic concepts withing our community but bring a touch of freshness reflecting our natural setting. Drawings will be presented to the ACC for approval and then we will move on to the next phase of the project which is to have conceptual engineering plans to be presented for approval. We are very excited and look forward to see the improvements commence in the near future.

Brining our community together and including new residents as we continue to grow is one of our main priorities. Our Special Events Committee is constantly thinking of ways to bring residents together and share a fun time at Quail Point Lodge. This month, preparations are underway to welcome Fall with a Fun Fest and Chili Cook Off which aims to welcome new residents to our beautiful city with a fun afternoon of camaraderie and our state’s national dish!   Please see more information under Save the Date.

Summer is in full swing and the weather has been hot and hotter in our beautiful area. We understand that is has been difficult to keep our gardens and lawns looking green but we encourage you to observe water conservation efforts directed by the City of Horseshoe Bay. Please keep in mind that the LCRA is implementing drought response Stage 1 under the LCRA Drought Contingency Plan for Firm Water Costumers which requests that firm water costumers implement voluntary drought response measures.  For more information, please visit our city’s website at https://www.horseshoe-bay-tx.gov/170/Utility-Department.

Horseshoe Bay POA Helpful Tips

Did you know that August has an Eat Outside Day? Yes, it does! Enjoy every last bit of summer by packing a picnic and visit one of our local parks or visit Quail Point Lodge. Either way, enjoy the sunshine and make new memories to last well into Fall. Quail Point Lodge has beautiful outdoor grounds in the back area with a beach area to cool off in the lake and is available to POA members. If you are interested in visiting, please view the HSBPOA calendar on our website home page or call 830-598-8795 to ensure there are no events planned for the day you are planning to visit.

It's been HOT, HOT, HOT! Keeping up with regular physical activities is an important part of a healthy lifestyle so if you are planning on exercising outdoors be sure to take some precautions so you don’t get overheated. Exercise in the morning or evening, when it’s likely to be cooler outdoors. If possible, exercise in shady areas. If it’s too hot to go out, work out at the gym, or walk laps or climb stairs inside an air-conditioned building. Drink plenty of water. Don’t wait until you’re thirsty. Help your body sweat and cool down by drinking water frequently.

Cheesy Chicken in Poblano Sauce

By Kirstie Howard

Happy August! Weather in Horseshoe Bay has started to simmer down and warm meals are back on the menus! One of my favorite dishes to spice up anyone's day is my Cheesy Chicken and Poblano Sauce Recipe! With a delicious blend of cumin, herbs and cilantro this dish will be a hit!

INGREDIENTS

  •  2 to 3 medium poblano peppers, seeded and stemmed, chopped
  • 1 cup chicken or vegetable stock
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon Mexican herb blend or dried oregano
  • A small handful cilantro leaves plus a few leaves for garnish
  • Salt and pepper
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1/2 cup heavy cream or Mexican crema
  • 3 tablespoons EVOO Extra Virgin Olive Oil
  • 4 to 6 pieces boneless, skinless chicken breast
  • 1 1/2 cups shredded Manchego cheese
  • Tortillas, for serving
  • Thinly sliced red onions, for garnish

DIRECTIONS

Step One

In a blender or food processor, combine peppers with stock, onions, garlic, cumin, herb blend, cilantro, salt and pepper; pure. In a saucepot over medium heat, melt butter and whisk in flour. Add milk and cream, and raise heat a bit. Add poblano pure and simmer to thicken and cook sauce, 20-25 minutes.

Step Two

Preheat oven to 375F.

While the sauce is cooking, place a large skillet over medium-high heat and add the EVOO (3 turns of a pan). Season chicken breasts with salt and pepper and brown 3-4 minutes on each side then transfer to casserole dish. Spread poblano sauce over the top, cover with cheese and bake 15-20 minutes, depending on size of chicken pieces -- dish should be brown and bubbly on top.

Serve with tortillas and garnish with cilantro sprigs and red onions.

The first centralized kiosk location in Horseshoe Bay West is selected. Also, cost estimates for purchase of the CBUs and kiosk construction were presented and approved. Before proceeding, the HSB POA must complete administrative processes to secure the location, receive design approval, and request a permit for construction.

The HSBPOA will continue to provide updates as we move onto the next phase. Thank you for your patience and support.
