Where did our summer go? I want to start a petition to make summer one month longer. So many things we wanted to do and never got done. Amazing how quick it turns from saying goodbye to our league bowlers and here we are welcoming them back.

But that's not always a bad thing. League lineage, food sales, beer and soda sales, rental shoes, etc. Those income generators are dearly missed during the summer.
Talking about income generators, how do you know your pricing is right? Food costs are an area that really needs some attention. How do we know we are at the right price with our food?
If you can run at 35% food cost, you should be very profitable on food. Easy math would be that if we paid $1.00 for a burger patty and $.50 for a bun, and $.50 for french fries that would equal $2.00. Multiply by three and that would give you a $6.00 sale price equals a 33.3% food cost.

WHOAH, hold on now.  If you have a deep fried item you will need to add $.10 to every item for oil. How about ketchup, mustard, napkins, salt, pepper, etc.? Add another $2.50 for condiments. Now we're up to a 39% food cost. Are you including lettuce, tomatoes and onions for free? Are you accounting for spoilage? So many things in the restaurant business that we don't thing about. The food business is changing!

We think about bowling business. It's getting more and more prevalent. Don't be afraid to reach out to your local Sysco representative or whatever food house for help.

ASCAP Target 9 Bars Nationwide for Music Licensing Infringement, Including Willoughby Brewing Co.

Cleveland, Ohio - Willoughby Brewing Co. is one of nine venues nationwide targeted in a new legal attack by ASCAP contending that clubs are "infringing" on songwriters' copyrights by playing music without paying a licensing fee. 

"Music is enormously valuable to bars and restaurants, creating an emotional connection with patrons and providing the right ambiance to attract and retain customers." said ASCAP Executive Vice President of Licensing Vincent Candilora in a release announcing the action. 

"Hundreds of thousands of well-run businesses across the nation recognize the importance of paying music creators to use their music, and understand that it is both lawful and right thing to do," he said in the release.
