Jalapeno Clam Bucket with Wine
25 Minutes - 6-8 Servings
50 littleneck clams
4 tablespoons plus 2 teaspoons unsalted butter
2 slices bacon, diced (optional)
OR 2 Garlic Cloves
1 cup White Wine
1 to 2 jalapeño peppers, to taste, seeded and diced
  • Melt 2 tablespoons of butter
  • Add Bacon or Garlic Gloves
  • Sauteed - Bacon should be crispy
  • Add Wine and Layer Clams - Cover
  • 10 minutes the Clams should open
  • Filter Clam Juice threw a Cloth
  • Put Open Clams in a bucket
  • Melt addl butter with jalapenos
  • Pour Clam Juice, butter and Jalapeno over Clams
  • Parsley for garnish (optional)
  • Serve with Warm Bread for Dipping

DIRECTIONS
  • Heat oil in a deep fryer to 365 degrees F (185 degrees C).
  • Rinse fish, pat dry, and season with salt and pepper.
  • Combine flour, garlic powder, paprika, 2 teaspoons salt, and 2 teaspoons pepper. Stir egg into dry ingredients.
  • Gradually mix in one beer until a thin batter is formed.
  • You should be able to see the fish through the batter after it has been dipped.
  • Dip fish fillets into the batter, then drop one at a time into hot oil.
  • Fry fish, turning once, until both sides are golden brown.
  • Drain on paper towels, and serve warm.
