Jalapeno Clam Bucket with Wine
25 Minutes - 6-8 Servings
50 littleneck clams
4 tablespoons plus 2 teaspoons unsalted butter
2 slices bacon, diced (optional)
OR 2 Garlic Cloves
1 cup White Wine
1 to 2 jalapeño peppers, to taste, seeded and diced
Melt 2 tablespoons of butter
Add Bacon or Garlic Gloves
Sauteed - Bacon should be crispy
Add Wine and Layer Clams - Cover
10 minutes the Clams should open
Filter Clam Juice threw a Cloth
Put Open Clams in a bucket
Melt addl butter with jalapenos
Pour Clam Juice, butter and Jalapeno over Clams
Parsley for garnish (optional)
Serve with Warm Bread for Dipping

INGREDIENTS:
Serves 8 30 minutes

cod fish fillets
salt and pepper
1 cup
all-purpose flour
2 tablespoons
garlic powder
2 tablespoons
paprika
2 teaspoons
salt
2 teaspoons
ground black pepper

egg
, beaten
1 (12 ounce) bottle
beer
DIRECTIONS
Heat oil in a deep fryer to 365 degrees F (185 degrees C).
Rinse fish, pat dry, and season with salt and pepper.
Combine flour, garlic powder, paprika, 2 teaspoons salt, and 2 teaspoons pepper. Stir egg into dry ingredients.
Gradually mix in one beer until a thin batter is formed.
You should be able to see the fish through the batter after it has been dipped.
Dip fish fillets into the batter, then drop one at a time into hot oil.
Fry fish, turning once, until both sides are golden brown.
Drain on paper towels, and serve warm.
