New Things to Try in the Kitchen
Roast Lamb For Easter
Ingredients for 8 servings
  • 6 tablespoons olive oil
  • ¼ cup fresh rosemary(10 g)
  • 6 cloves garlic
  • 3 shallots
  • ½ tablespoon dried thyme
  • 2 teaspoons pepper
  • 3 ½ teaspoons salt
  • 5 lb leg of lamb(2.5 kg), boneless
  • 1 carrot
  • potato
  • onion
  • 4 cloves garlic
  • salt, to taste
  • pepper, to taste
  • olive oil
  • 8 slices garlic bread
Preparation
  1. Create the herb rub in a food processor. Pulse the olive oil, rosemary, garlic, shallots, thyme, pepper and salt together until you have a thick paste.
  2. Spread out the leg of lamb and rub half of the herb rub all over the exposed side of the lamb.
  3. Roll up and securely tie the leg of lamb together with kitchen twine.
  4. In the roasting pan, spread out the carrots, onions, potatoes, garlic cloves, salt, pepper, and oil.
  5. Rest the leg of lamb on top of the vegetables. Pour the rest of the herb rub all over the leg of lamb, spread out so it coats evenly.
  6. Roast at 450°F (230°C) for 50 - 60 minutes or until the internal temperature reads 130°F (55°C) for medium rare.
  7. Remove the leg of lamb and let it rest of 20 minutes before you remove the kitchen twine to carve.
  8. Serve with the roasted vegetables.

Hot Cocoa Cookies
  • 1 cup  brown sugar  (220 g)
  • ½ cup  white sugar  (100 g)
  • 2 eggs
  • 1 stick butter
  • 4 oz  unsweetened chocolate  (115 g)
  • 1 cup  flour  (125 g)
  • ½ cup  cocoa powder (60 g)
  • ¼ teaspoon  baking soda
  • 1 tablespoon  cinnamon 
  • ½ teaspoon  salt
  • 1 teaspoon  chili powder
  • ¼ teaspoon  cayenne pepper, optional
  • ½ cup   chocolate chips (85 g)
  • 12 large marshmallows
Preparation
  1. Beat brown sugar, white sugar, and eggs.
  2. Melt the unsweetened chocolate and butter, allow to cool. Mix into the egg and sugar mixture.
  3. Add all of the dry ingredients, and mix thoroughly (you don't want any cayenne pepper clumps!).
  4. Stir in the chocolate chips.
  5. Space out 12 cookies on a baking sheet.
  6. Bake at 350°F (180°C) for 13 minutes. Remove the cookies from the oven.
  7. Top each one with a large marshmallow.
  8. Broil for 30 seconds, until the marshmallows have just started to brown.

How to bake a perfect ham

  • If you're starting with a fully cooked city ham, bake it in a 350 degree F oven for about 10 minutes per pound. If your ham is only partially cooked, bake it for 20 minutes per pound.
  • To help keep your ham moist and juicy, place the ham cut-side down in a baking pan and tent it with foil.
  • Every 20 minutes or so, brush the ham with glaze and baste it with the pan juices.
  • To finish, remove the foil tent, brush the ham with glaze and pan juices one more time, and turn the oven to broil. Broil for about about 3-to-5 minutes until the outside glaze is deliciously caramelized -- but watch it closely so it doesn't get too dark.
  • Before carving your baked ham, let it rest 15 minutes to redistribute juices and firm up the meat.

Banana Bread
  • 2 to 3 very ripe bananas, peeled (about 1 1/4 to 1 1/2 cups mashed)
  • 1/3 cup melted butter, unsalted or salted
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar (1/2 cup if you would like it less sweet, 1 cup if more sweet)
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups of all-purpose flour

Preparation
1 Preheat the oven to 350°F (175°C), and butter a  4x8-inch loaf pan.
2 In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the melted butter into the mashed bananas.
3 Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.
4 Pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour at 350°F (175°C), or until a tester inserted into the center comes out clean.
5 Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving. Slice and serve. (A bread knife helps to make slices that aren't crumbly.)
