Western Growers
features Babé Farms

Recently, we collaborated with our friends at Western Growers on a new video! In the video Babé Farms owners, Judy & Jeff Lundberg, and Food Safety Director, Ron Labastida briefly share their perspectives amid the COVID-19 pandemic. Check it out at the link below!
A big thank you to And Now U Know and The Snack Magazine for featuring Ande and Babé Farms!

Who doesn’t love a good wedge salad?! In our office, the unanimous favorite lettuce for the perfect wedge salad is our Ro-Minis! Petite Ro-Minis possess a sweet crunch that pairs nicely with a wide range of toppings. Just filet down the center and dress with your choice of fixings’ and voila, done! It’s that easy. And if you’re feeling bold, try grilling them this Memorial Day Weekend!
Congrats Karli!
We are excited to announce that on June 5th, Karli Lundberg, daughter of Babé Farms owners Jeff & Kelli Lundberg and granddaughter of Judy Lundberg, will be graduating high school! Earlier this month, Karli's school Orcutt Academy, honored its graduating class by holding a "drive through" celebration to hand out caps and gowns and some student awards. Karli was recently recognized as Orcutt Academy's senior Female Scholar Athlete of the Year, participating in golf, soccer, and track all while posting a 4.34 GPA. We are so proud of Karli and everything she has accomplished and wish her all the best in her future as she moves on to college at Cal Poly SLO!

Roasted Beet & Blueberry Salad
by EatingWell

  • 2 pounds small-to-medium beets
  • ½ cup water
  • 1 tablespoon fennel seeds, toasted
  • 2 tablespoons rice vinegar
  • 1 ½ teaspoons lemon juice
  • 1 ½ teaspoons whole-grain mustard
  • 1 small clove garlic, minced
  • ½ teaspoon honey
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground pepper
  • ¼ cup canola oil
  • 3 tablespoons extra-virgin olive oil
  • ½ cup fresh blueberries
  • ½ cup baby mozzarella balls
  • Thinly sliced radishes & microgreens for garnish

Step 1
Preheat oven to 375 degrees F.

Step 2
Place beets in a 9-inch baking pan, add water and cover with foil. Roast until the beets can be easily pierced with a fork, 1 to 1 1/4 hours. Set aside, uncovered, until cool enough to handle, about 30 minutes. Peel and refrigerate until cold, about 30 minutes.

Step 3
Grind fennel seeds in a clean spice grinder or with a mortar and pestle. Transfer to a mini food processor and add vinegar, lemon juice, mustard, garlic, honey, salt and pepper. Process until smooth. With the motor running, gradually add canola and olive oils.

Step 4
Cut the beets to uniform size, halving the smaller ones and quartering the larger ones; place in a medium bowl. Add the vinaigrette and toss to coat. Add berries and mozzarella; toss to coat. Serve topped with radishes and microgreens, if desired.
