This great looking bacon wrapped prime rib was posted on our SmokinTex Facebook page by Greg H., owner of Crispy's Bar and Grill in Kannapolis, NC.

Greg says " We used a Conviction Whiskey Barrel for wood which is from a local distillery. Rubbed it with our Bacon Jam which acted like glue to hold the bacon weave."

Greg smoked this prime rib in his  SmokinTex 1500-CXLD.

Crispy's was featured on the Travel Channel Food Paradise on the Bacon Makes It Better episode.

This is Greg H.'s large capacity  SmokinTex 1500-CXLD and it's loaded here with " Homemade Maple Smoked Honey Sriracha Bacon, Bacon Wrapped Conviction Whiskey Barrel Smoked Chicken, and ribs all in that smoker."




Smoked Bacon Recipes 



Bacon Lover's Recipe
"Home made peach jam injection and rub with a garden crushed pepper blend of habanero, jalapeño, ghost chili, and bandanna pepper. 2 oz of hickory and 3 oz of apple blocks.
225°F for 4 hours on smoker (until internal is 160°F). Wrap and into the oven at 275°F until internal was 198°-205°F.
This is a spicy meat but has hints of the fruit! Everyone loved it!
