Tuesday- Wedding Soup / Chili
~ Wedding soup is one of those soups, no matter how much we make, it will be gone before the next soup day. Filled with tons of fresh veggies, roasted chicken, those delicious mini pastas, and of course our addicting little meatballs, make for a soup that is hard to pass up.
Then there is our chili, another classic that is just perfect for a cold February day. I personally can eat chili no matter the season or temperature outside, it takes me back to my youth. Chili was one of the first meals my dad mastered for us kids, and we appreciated it not being frozen fish sticks. It really is a full meal in a bowl but even better with some of our biscuits or olive oil bread to dunk.

Thursday- Mushroom and Wild Rice / Broccoli Cheddar
~ Jess makes a mushroom soup that could even covert the supposed non-mushroom lovers out there. It is loaded with tons of flavors from the couple different mushroom we use, the veggies, and all the fresh herbs and seasoning. The rice adds the heartiness that we all need in a veggie soup this time of year.
The kids may not even complain about eating their vegetables tonight, cheddar broccoli for the win. It is also stocked with carrots, celery, and potatoes to make it a complete meal for a busy weekday night.
Friday- Meatballs and Sauce
~Another classic to round out the week, homemade meatballs in Sunday gravy. Jess mixes the fresh ground beef by hand with tons of fresh herbs, breadcrumbs, and parmesan a full 24 hours ahead so that all the flavors can meld and create the most melt in your mouth delicious meatball. We bake them just enough and add them into our scratch made red sauce. You make the pasta or create your own meatball sammi and dinner is done.

Salad- Caprese
~ Sliced juicy tomatoes, fresh mozzarella, herbaceous basil, and a drizzle of balsamic reduction all on a bed of spinach.
