Tuesday- Stuffed Pepper / Loaded Baked Potato
~As much as we enjoyed our time off, we missed creating food for you all. We think you might have missed us too, so we are starting off with two favorites. Jess makes a mean Stuffed Pepper soup, even for people who don't like stuffed peppers, you have to try it and prepare to be surprised.
This Irish girl picks the potato soup for my lunch. It is not just a plain potato soup however, it is loaded with bacon, ham, green onion, and cheddar cheese. Perfect dinner to start your busy week back to the grind.

Thursday- Minestrone / Mushroom Wild Rice
~ We all are guilty of not eating the best over the holidays and Minestrone gives you a shot of veggies in every bite. It is a healthy soup but also surprisingly delicious and keeps you coming back for bite after bite. It is not just filled with veggies but also beans and pasta.
Mushroom Wild Rice gives you the earthy savory flavors that we all crave once and while. Jess adds just enough cream to make all the flavors come together. Perfect soup to pair with our rosemary garlic bread.
Friday- Chicken Enchiladas
~ We were not just thinking of you all when we made this menu, but ourselves and our families too. We wanted to make a meal that was different than what we have been eating the last couple weeks, yet a meal that is easy and loved by the whole family. The slow roasted chicken is uber flavorful on its own. Then Jess creates on of her amazing sauces that adds a depth to this dish that can't be matched. Dinner is done.
Saturday- Quiche
