~ One of Jess's favorite soups and it show every time. Beef is melt in your mouth tender, veggies still have a little bite, and the herbs and seasoning are spot on. The perfect winter soup.

Thursday- Tuscan White Bean
~ I am a sucker for a bean soup of any kind, and this soup is no different. Full of healthy proteins, vegetables, greens, and herbs. This is definitely one of those soups that cries for a crusty bread to be dunked into it.
Friday- Empanadas
~ Alright we have a fish and vegetarian option this Friday! We are making our infamous flakey empanada dough and filling it with either; Salmon Florentine or Chickpea and Green Chilies. We will be poaching the salmon with tomatoes as to not over cook it and then folding it with feta and fresh spinach. While the chickpeas will be mixed with green chilies, tomatoes, and queso fresco cheese. We will be creating sauces to pair and dunk these bad boys into, which make them all the more fun to eat. This meal really is one of my favorites and now my 82 year old father loves them too!
Saturday- Quiche

~ A salad that everyone comes back for. I mean it does go perfect with our in house made ranch! Black beans, tomatoes, corn, carrots, red onion, peppers, and cheddar cheese on a bed of romaine.
