Fireproof charts Chef Curtis Duffy’s rise in spite of trauma, to being mentored by and recognized among the world’s top chefs. Amid childhood chaos in rural Ohio, a young Duffy first found refuge in Home Ec class, then at one of Columbus’s best restaurants, where he honed his skills. His passion ignited, Duffy was dead set on leaving Ohio and breaking the Duffy family curse.


But the tragic deaths of his parents jeopardized his promising trajectory. Summoning extraordinary fortitude, Duffy ate pain, graduated from culinary school, and moved to Chicago to work in Chef Charlie Trotter’s kitchen—a hotbed of talent that produced prominent alumni such as Grant Achatz, Graham Elliot, and Homaro Cantu. Inspired by stellar peers and staging for Thomas Keller at the French Laundry, Duffy’s drive only grew.

His meteoric rise would cost him a marriage—the price of ambition, focus, and Grace restaurant. Grace earned three Michelin stars four years in a row, solidifying Duffy’s place as one of the world’s greatest culinary artists. But in a heartbreaking act of defiance, Duffy walked out after disputes with Grace’s owner.



Unstoppable, Duffy created Ever restaurant—a launch nearly derailed by the COVID-19 pandemic. Duffy persisted where many others would have resigned their craft, and Ever earned two Michelin stars from 2021-2024. Duffy was ranked one of the “50 Most Powerful People in American Fine Dining” in 2024 by the Robb Report.

Fireproof is the story of my childhood, my dark upbringing, and how I’ve taken that side of what I know and how I was raised into becoming a world-class chef and everything in between. 


My story hasn’t been a journey without bumps and twists. What road ever is? Even in the most stressful moments, I’ve found myself learning to search for and discover purpose and joy in my life and in food. The ability to share those darker moments with the world through this book was like a therapy session for me, and I hope you can appreciate the vulnerable moments, as well as my side of the world of food and restaurateurship.

In Fireproof, I discuss my love of coconut in any form. Coconut fills you up, but it also explodes with flavor every time you take a spoonful. It’s the ultimate luxury food.


The different stages of coconut growth are each amazing and delicious. And at every stage, all the flesh on the inside is edible. It fascinates me. I love raw coconut. I love coconut water. I love young coconut, old coconut, and mature coconut. It’s rich and fatty and creamy—and it lends itself to so many different things; sweet and savory and everything in between. For me, coconut is a fatty luxury that brings a dish to the ultimate level of decadence. When something’s very fatty, it usually absorbs a lot of flavor, but coconut also doesn’t mask a lot of flavor, which is a crazy thing. It takes on flavor very easily, and it goes well with things. I’m not a dairy guy, so I replace that with coconut and it becomes a little bit healthier… But you still get the same texture and feel in your mouth as if you were adding heavy cream. Here is my recipe for pancakes using coconut. 

I also write about some of my favorite ingredients, like fennel. I love how you can use the entire plant in different ways—bulb, stalk, fronds, blossoms, and seeds—which is part of what piques my interest and part of what gives the perennial herb its value, and why I use it in so many of my new dishes. For your book club, try a fresh fennel salad or something shareable like a fennel tapenade to experience its power at home. 


Some would say my signature dish and a perennial guest favorite is the Alaskan King Crab dish I used to make at Avenues. We still make a version of it today at Ever. Ambitious home cooks have attempted it with recipes like this one, with cucumber, wild golden char roe, floral cream, and tangerine lace. 


One of my first dessert experiments as a chef when I worked at Muirfield Village Golf Club in Dublin, Ohio, was a smoked cherry ice cream. If you don’t have an ice cream maker on hand, try a smoked cherry cocktail for your book club meeting with bright, citrus flavors, smooth brandy, and the sweet smokiness of the smoked cherries.”
